This Chili Frito Corn Salad is the side dish you never knew you needed until now. Warm weather is right around the corner and so are all those summer time BBQ’s and cook outs. Nothing goes better with anything that you can throw on the grill than this. I can’t even express how incredible these flavors and textures to together.
The sweetness of the corn, saltiness of the cheese and crunch of those Chili Fritos is like a party in my mouth. Whenever I make this for parties, everyone just loves it. I’ve been making this for so many years that it’s turned into a summer staple at my house. Make this for your next warm weather party and it sure to be a hit with all of your guests.

- Canned Corn
- Red Bell Pepper
- Cheddar Cheese
- Monetary Jack Cheese
- Mayonnaise
- Black Pepper
- Fresh Parsley
- Chili Fritos
How To Make It
Heres how to made this amazing side dish. You can find the full ingredients list along with instructions on the recipe card below.
Fist, in a large bowl, add the corn, minced bell pepper, mayonnaise, cheeses, pepper and fresh parsley. Stir everything together until it’s evenly combined.
PRO TIP: Be sure to drain the corn very well to prevent the chips from getting soggy too quickly.

Then, stir in the semi crush the Chili Fritos, garnish with parsley (optional), serve immediately and enjoy!
PRO TIP: Add the Fritos just before serving or they will become soggy.

Can This Be Made Ahead Of Time?
Yes, the salad can be assembled up to 24 hours before serving, covered and placed in the refrigerator. Just don't add the crushed Fritos until right before serving or they will become soggy.
Do I Have To Use Chili Fritos?
No, original Fritos would be great to use here, too.
Storage
Add the salad to an air tight food safe container and it will last in the refrigerator for up to three days. Keep the Fritos separate if possible. Storing this dish already assembled is difficult because the chips will get soggy.

Chili Frito Corn Salad Recipe
Ingredients
- 30 Oz can Canned Corn, drained very well
- 1 Medium Red Bell Pepper, minced
- 1 Cup Cheddar Cheese, hand shredded
- 1 Cup Monetary Jack Cheese, hand shredded
- 1 Cup Mayonnaise
- 1 Tbs Black Pepper
- ¼ Cup Fresh Parsley, chopped
- 9 Oz bag Chili Fritos
Instructions
- In a large bowl, add the drained corn, minced bell pepper, mayonnaise, cheeses, pepper and fresh parsley. Stir everything together until it’s evenly combined.
- Semi crush the Chili Fritos (you don’t want to turn them to dust, just break them up a bit) and add them to the corn mixture. Be sure NOT to add the Fritos until just before serving or they will become soggy.
- Next, stir the Fritos into the corn mixture, serve and enjoy!
