Chocolate Raspberry Coffee Cake

Raspberry coffee cake is a delicious breakfast, dessert or snack made with boxed chocolate cake mix covered in a layer of raspberry jam and the perfect amount of crumbs.

Ingredients
  

  • 1 box Chocolate Cake Mix (plus the ingredients to make it)
  • 1 cup Raspberry Jam
  • 2.5 cups Four
  • 1 cup Brown Sugar
  • 1 tbs Cinnamon
  • 2.5 sticks Butter, melted and cooled slightly

Instructions
 

  • Preheat the oven to 350°
  • Make the cake according to the directions on the box and place it into the oven for 15-20 minutes. Let it cool for 10 minutes.
  • Add the raspberry jam to microwave safe bowl and microwave it for about 30 seconds or until it’s warm. This is just to make the jam easier to spread.
  • Pour the jam over the half baked cake and using the back of a spoon, spread it out evenly.
  • In a separate bowl, mix together the four, brown sugar and cinnamon until it’s evenly combined.
  • Stir the melted butter thats been slightly cooled into the dry ingredients.
  • Using your fingers, gently break the crumbs up into small pieces and sprinkle them evenly over the cake.
  • Place the cake back into the oven for another 20 minutes or until the cake is cooked all the way through.
  • Finally, let it cool completely before slicing and serving. Enjoy!
