Chocolate Raspberry Coffee Cake
Raspberry coffee cake is a delicious breakfast, dessert or snack made with boxed chocolate cake mix covered in a layer of raspberry jam and the perfect amount of crumbs.

- 1 box Chocolate Cake Mix (plus the ingredients to make it)
- 1 cup Raspberry Jam
- 2.5 cups Four
- 1 cup Brown Sugar
- 1 tbs Cinnamon
- 2.5 sticks Butter, melted and cooled slightly
Preheat the oven to 350°
Make the cake according to the directions on the box and place it into the oven for 15-20 minutes. Let it cool for 10 minutes.
Add the raspberry jam to microwave safe bowl and microwave it for about 30 seconds or until it’s warm. This is just to make the jam easier to spread.
Pour the jam over the half baked cake and using the back of a spoon, spread it out evenly.
In a separate bowl, mix together the four, brown sugar and cinnamon until it’s evenly combined.
Stir the melted butter thats been slightly cooled into the dry ingredients.
Using your fingers, gently break the crumbs up into small pieces and sprinkle them evenly over the cake.
Place the cake back into the oven for another 20 minutes or until the cake is cooked all the way through.
Finally, let it cool completely before slicing and serving. Enjoy!
