Cowboy biscuit casserole is a delicious weekday dinner made with layers of buttery biscuits, taco seasoned ground beef and a cheesy sour cream topping.
1BoxRed Lobster Cheddar Bay Biscuit Mix (Plus the water on the package instructions and flavoring packet)
1TbsOlive Oil
½Onion, chopped
3ClovesGarlic, chopped
1-1.5PoundsGround Beef
2OzTaco Seasoning
1CupSour Cream
½CupMayonnaise
2CupsCheddar Cheese, hand shredded (divided)
Salt and Pepper to taste
1TbsGarlic Powder
Instructions
Preheat the oven to 350°
In a large bowl, add the biscuit mix with water (measurements on the back of the package) and stir to combine. If using Red Lobster Cheddar Bay Biscuit Mix, I like to add the seasoning packet that comes in the box for the topping right into the mix for extra flavor. Then, push the mixture down into the bottom of a greased 9 x 13” baking dish using your fingers. Careful, it will be a little sticky.
In a large skillet, sauté the chopped garlic and onion in a little olive oil until soft.
Add the ground beef and cook it according to the directions on the back of the taco seasoning packet. We’re using two packets for extra flavor instead of one! Add the beef mixture evenly on top of the biscuits.
In a medium sized bowl, add the sour cream, mayonnaise and half of the cheddar cheese. Season it with salt, pepper and garlic powder and mix everything together. Pour the mixture on top of the beef and spread it out so that it’s flat and even.
Sprinkle more cheese on the top and place it into the center rack of the oven for 30-35 minutes.
Finally, let the casserole rest for 5-10 minutes sprinkle the top with dried parsley, and enjoy!
