If there’s one thing that I can promise you, it’s that you are going to love this cowboy biscuit casserole! There are so many versions of this recipe circulating around the internet right now and I can confidently say that this one is the best.How do I know that? My brother Mark who’s also my unofficial food critic (and loves to bust chops) had absolutely nothing to say besides rave reviews. What a huge compliment.
This recipe kind of reminds me of a Shepards Pie or of that Cheddar Bay Biscuit casserole that was making its rounds a few years ago. But this one’s got a southwestern flare. Make this for a busy weekday dinner or one one of those nights that you’re really in the mood for some delicious, stick to your ribs comfort food. It’s going to be a huge hit!

- Red Lobster Cheddar Bay Biscuit Mix
- Olive Oil
- Onion
- Garlic
- Ground Beef
- Taco Seasoning
- Sour Cream
- Mayonnaise
- Cheddar Cheese
- Salt and Pepper
- Garlic Powder
- Dried Parsley
How To Make It
Heres how to make this delicious casserole. You can find the full ingredients list along with instructions on the recipe card below.
Preheat the oven to 350°
First, in a large bowl, add the biscuit mix with water and stir to combine. If using Red Lobster Cheddar Bay Biscuit Mix, I like to add the seasoning packet that comes in the box for the topping right into the mix for extra flavor. Then, push the mixture down into the bottom of a greased 9 x 13” baking dish using your fingers. Careful, it will be a little sticky.

Now, in a large skillet, sauté the chopped garlic and onion in a little olive oil until soft. Add the ground beef and cook it according to the directions on the back of the taco seasoning packet. We’re using two packets for extra flavor instead of one! Add the beef mixture on top of the biscuits.

Now, in a medium sized bowl, add the sour cream, mayonnaise and cheddar cheese. Season it with salt, pepper and garlic powder and mix everything together. Pour the mixture on top of the mixture and spread it out so that it’s flat and even. Sprinkle more cheese on the top and place it into the center rack of the oven for 30-35 minutes. Finally, let the casserole rest for 5-10 minutes sprinkle the top with dried parsley, and enjoy!

Storage
Let the casserole cool completely and place it into a food safe air tight container. It will last in the refrigerator for up to three days.

- 1 Box Red Lobster Cheddar Bay Biscuit Mix (Plus the water on the package instructions and flavoring packet)
- 1 Tbs Olive Oil
- ½ Onion, chopped
- 3 Cloves Garlic, chopped
- 1-1.5 Pounds Ground Beef
- 2 Oz Taco Seasoning
- 1 Cup Sour Cream
- ½ Cup Mayonnaise
- 2 Cups Cheddar Cheese, hand shredded (divided)
- Salt and Pepper to taste
- 1 Tbs Garlic Powder

This casserole was very easy to make but it didn't taste like I thought it would.
I made it exactly like the recipe called for.There were no comments on the site so I'm not sure what others think. I have always had good success with all the recipes from the al dente diva.
