In a large bowl, combine the brussels sprouts, heavy cream, minced garlic, Italian seasoning, salt, pepper, garlic powder, mozzarella, parmesan and gouda cheese. Be sure to reserve about ½ cup of the shredded guoda cheese.
Add the mixture to a baking dish or cast iron skillet. Top it with the remaining cheese
Place it into the center rack of the oven for about 25 minutes or until the cheese is melted and the casserole is hot and bubbly. Let it cool for 5 minutes, serve and enjoy.
