Creamy brussels sprout casserole is the ultimate side dish. Not only is it absolutely delicious but it’s super easy to make, too. This is one of those special side dishes that can be served with a casual dinner or as a Thanksgiving side. It’s so versatile in that way.
Crowd pleasing recipes like this are my favorite to make for my family and friends. They’re always a hit and take very little effort on my part to put together. Recipes that can get kids to happily eat their brussels sprouts are few and far between. It’s truly hard to resist all the creamy, cheesy goodness.

- Gouda Cheese
- Mozzarella Cheese
- Parmesan Cheese
- Italian Seasoning
- Salt and Pepper

How To Make It

Preheat the oven to 375°
In a large bowl, combine the brussels sprouts, heavy cream, minced garlic, Italian seasoning, salt, pepper, garlic powder, mozzarella, parmesan and gouda cheese. Be sure to reserve about ½ cup of the shredded guoda cheese. Add the mixture to a baking dish or cast iron skillet. Top it with the remaining cheese
PRO TIP: Be sure to shred the cheeses yourself and avoid the pre shredded stuff that comes in a bag. It will melt much better that way.

Place it into the center rack of the oven for about 25 minutes or until the cheese is melted and the casserole is hot and bubbly. Let it cool for 5 minutes, serve and enjoy.
PRO TIP: Let the dish cool for the center to firm up and settle. This will make it easier to serve and eat.

Can Frozen Brussels Sprouts Be Used?
Yes the can be. Just be sure to thaw them first.
Can Different Cheeses Be Used Here?
I used a mix of Gouda and mozzarella for this recipe and really loved it. If you can’t find or don’t like Gouda you can use Swiss cheese instead. All mozzarella or all Gouda would be great, too for this recipe.
Storage
Let the brussels sprouts cool completely and place them into a food safe, air tight container. They will last in the fridge for up to three days.

Ingredients
- 4 Cups Brussels Sprouts, cleaned and trimmed
- 1 Cup Heavy Cream
- 3 Cloves Garlic, minced
- 1 Tbs Italian Seasoning
- 2 Tbs Garlic Powder
- ¾ Cup Parmesan Cheese, grated
- ½ Cup Mozzarella Cheese
- 1.5 Cup Gouda Cheese, hand shredded
- Salt and Pepper to taste
Instructions

- In a large bowl, combine the brussels sprouts, heavy cream, minced garlic, Italian seasoning, salt, pepper, garlic powder, mozzarella, parmesan and gouda cheese. Be sure to reserve about ½ cup of the shredded guoda cheese.
