Boil the potatoes in either water for 10 minutes or until they are fork tender. Drain them from the water and add them to a parchment paper lined baking sheet.
Using a flat bottomed glass, carefully push down onto each potato until its slightly flattened but not falling apart.
Drizzle them with olive oil and season them with salt, pepper, garlic powder ad Italian seasoning. Gently toss the potatoes until they are all evenly coated.
Place them into the center rack of the oven for about 20 minutes or until the potatoes are golden and crispy. Let them cool slightly, serve and enjoy.
