Ingredients
  

  • 1-1.5 Lbs Baby Yellow Potatoes, cleaned
  • 3-4 Tbs Olive Oil
  • 2 Tbs Garlic Powder
  • 1 Tbs Onion Powder
  • 2 Tbs Italian Seasoning
  • Salt and Pepper to taste

Instructions
 

  • Boil the potatoes in either water for 10 minutes or until they are fork tender. Drain them from the water and add them to a parchment paper lined baking sheet.
  • Using a flat bottomed glass, carefully push down onto each potato until its slightly flattened but not falling apart.
  • Drizzle them with olive oil and season them with salt, pepper, garlic powder ad Italian seasoning. Gently toss the potatoes until they are all evenly coated.
  • Place them into the center rack of the oven for about 20 minutes or until the potatoes are golden and crispy. Let them cool slightly, serve and enjoy.
