How To Make It
Heres how to make this amazing side dish. You can find the full ingredients list along with instructions on the recipe card below.
1. Boil the potatoes in either water for 10 minutes or until they are fork tender. Drain them from the water and add them to a parchment paper lined baking sheet. Using a flat bottomed glass, carefully push down onto each potato until its slightly flattened but not falling apart.
PRO TIP: If you'd like to add even more flavor to these potatoes, boil them in chicken or vegetable broth instead of water.

2. Drizzle them with olive oil and season them with salt, pepper, garlic powder ad Italian seasoning. Gently toss the potatoes until they are all evenly coated. Place them into the center rack of the oven for about 20 minutes or until the potatoes are golden and crispy. Let them cool slightly, serve and enjoy.

What Kind Of Potatoes Should I Use?
I used baby yellow potatoes here but fingerling, purple, baby red potatoes or any other smaller sized potato would work.
Can These Be Made In The Air Fryer?
Yes, absolutely. Follow the first part of the recipe up until it comes time to pop them into the oven. Then just load them into the air fryer and cook them at 400 degrees for about 20 minutes.
Storage
Let the potatoes cool completely and place them into a food safe air tight container. They will last in the fridge for up to three days.

If your in a hurry, you can microwave the potatoes and then spritz them with olive oil and sea salt after smashing. Then put in air fryer to brown them and make them crispy. Freda
