Easy Baked Chicken Fajitas

Equipment

  • 9" x 13" baking dish

Ingredients
  

  • 1-1.5 lbs chicken breast (thinly slicedd)
  • 1 1 oz fajita sasoning packet (mild)
  • 1 8 oz package cream cheese, room temperature
  • c salsa (mild)
  • 1 c cheddar cheese, shredded (divided)
  • 1 c monterey jack cheese, shredded (divided)
  • 1 large sliced red bell pepper
  • 1 large sliced yellow bell pepper
  • 1 large sliced yellow or white onion
  • salt and pepper to taste
  • tortillas (optional)
  • parsley for garnish (optional)

Instructions
 

  • First, in a medium size bowl, add the softened cream cheese, salsa and fajita seasoning packet. Mix well to combine.
  • Then add the chicken to a 9 x 13” baking dish in a single layer ( a slight overlap is fine) and lightly season with salt and pepper.
  • Now spread the cream cheese mixture evenly over the top of the chicken.
  • Next, sprinkle half of the cheese on top, add the sliced peppers and onions and lightly season them with salt and pepper. Then top with the rest of the cheese.
  • After that, bake it in the oven until the cheese is melted and the chicken is cooked all the way through at 375 degrees for about 30-40 minutes.
  • Finally, let it cool slightly, garnish with parsley ( optional) and serve either alone, over white rice or in a flour tortilla and enjoy!
