First, in a medium size bowl, add the softened cream cheese, salsa and fajita seasoning packet. Mix well to combine.
Then add the chicken to a 9 x 13” baking dish in a single layer ( a slight overlap is fine) and lightly season with salt and pepper.
Now spread the cream cheese mixture evenly over the top of the chicken.
Next, sprinkle half of the cheese on top, add the sliced peppers and onions and lightly season them with salt and pepper. Then top with the rest of the cheese.
After that, bake it in the oven until the cheese is melted and the chicken is cooked all the way through at 375 degrees for about 30-40 minutes.
Finally, let it cool slightly, garnish with parsley ( optional) and serve either alone, over white rice or in a flour tortilla and enjoy!
