If you’re looking for a super simple to make and delicious dinner, these easy baked chicken fajitas are the perfect recipe for you. They are so good and always a hit when I serve them to my friends and family. Not to mention I love making anything that I can bake together in one dish.
Easy recipes like this with less clean up are exactly what I need for a busy weekday dinner. If you decide to serve these without the tortillas, they’re low carb, too! What a nice option if you’re on a low carb or keto diet. The whole family can enjoy this dinner together and simply eat it how they'd prefer and enjoy!

- Salsa
- Cream Cheese
- fajita Seasoning Packet
- White Cheddar Cheese
- Monterey Jack Cheese
- Bell Pepper
- Onion
- Tortillas
- Parsley
How To Make It
Here is everything you'll need to make these delicious fajitas. You can find the full ingredients list along with instructions on the recipe card below.
Preheat the oven to 375 degrees
1. First, add the chicken to a 9 x 13” baking dish in a single layer ( a slight overlap is fine) and lightly season with salt and pepper. In a medium size bowl, stir togethr the cream cheese, salsa and fajita seasoning packet and spread the mixture evenly over the top of the chicken.
NOTE: You can slice the chicken into strips if you'd like but be aware to adjust the cooking time because it till take less time to finish due to the smaller pieces.

2. Next, sprinkle half of the cheese on top and add the sliced peppers and onions. Lightly season with salt and pepper then top with the rest of the cheese. Place it into the center rack of the oven for 30 minutes or until the chicken is cooked all the way through. Let it rest for 5 minutes, garnish with parsley (optional) and serve in a warm tortilla.
PRO TIP: Be sure to shred the cheese yourself and avoid the pre shredded stuff that comes in a bag. It will melt much better that way.

How should I Serve These?
I like to slice the chicken up right in the baking dish and serve these in flour tortillas. If you’d like to skip the tortillas, that’s fine, too. This recipe would be great served over white rice or alone.
Storage
Let the fajita mixture cool completely and place them into a food safe, air tight container. It will last in the refrigerator for up to three days.

Equipment
- 9" x 13" baking dish
Ingredients
- 1-1.5 Pounds Chicken Breast (thinly slicedd)
- 1 Oz Fajita Seasoning Packet
- 8 Oz Cream Cheese, room temperature
- ⅓ Cup Salsa
- 1 Cup Cheddar Cheese, shredded (divided)
- 1 Cup Monterey Jack Cheese, shredded (divided)
- 1 Large Red Bell Pepper, sliced
- 1 Large Yellow Bell Pepper, sliced
- 1 Large Onion, sliced
- Salt and Pepper to taste
- Tortillas
- Parsley for garnish (optional)

Hi Kim!! You absolutely can just be careful it may mold faster. I know cheese is freezable though! Also, if you spray your cheese grater with cooking spray the cheese will fall right off. It makes clean up so much easier.

Hey Tara, I have found that you're exactly right about how much better cheese melts when you shred it yourself! What are your thoughts about shredding the entire block of cheese and storing it in a baggie so I don't have to wash my shredder every time I need some shredded cheese?
