Easy Fried Rice

This delicious easy fried rice is made with leftover white rice, vegetables, soy sauce and just a few other simple ingredients.

Ingredients
  

  • 2 cups cooked white rice
  • 2 tbs butter
  • ½ c chopped carrots
  • ½ c chopped onions
  • ½ c frozen peas
  • 2 tbs minced garlic
  • 1 teaspoon garlic powder
  • 2 eggs, beaten
  • vegetable oil (as needed)
  • 4 tbs soy sauce
  • 1 teaspoon sesame oil

Instructions
 

  • First, in a large skillet, melt the butter and sauté the carrots for 5 minutes. Add he onions and lightly season them with salt and pepper. Once the vegetables are soft, add the minced garlic and stir for 1 minute.
  • Now add about 1 tbs of oil to the skillet and whisk the beaten eggs into the vegetables just until they’re cooked. Try your best not to over cook the eggs.
  • After that, add the white rice into the skillet and drizzle it with a little more oil (about 1 tbs). Add the peas and stir everything together. Cook the rice in the skillet for about 2-4 minutes stirring frequently.
  • Next add the soy sauce, sesame oil, salt, pepper and garlic powder. Please keep in mind that the soy sauce is salty.
  • Finally, stir the sauces into the rice mixture and let that cook for a couple more minutes. Then plate the rice, let it cool slightly and enjoy!
