Easy Fried Rice
This delicious easy fried rice is made with leftover white rice, vegetables, soy sauce and just a few other simple ingredients.

- 2 cups cooked white rice
- 2 tbs butter
- ½ c chopped carrots
- ½ c chopped onions
- ½ c frozen peas
- 2 tbs minced garlic
- 1 teaspoon garlic powder
- 2 eggs, beaten
- vegetable oil (as needed)
- 4 tbs soy sauce
- 1 teaspoon sesame oil
First, in a large skillet, melt the butter and sauté the carrots for 5 minutes. Add he onions and lightly season them with salt and pepper. Once the vegetables are soft, add the minced garlic and stir for 1 minute.
Now add about 1 tbs of oil to the skillet and whisk the beaten eggs into the vegetables just until they’re cooked. Try your best not to over cook the eggs.
After that, add the white rice into the skillet and drizzle it with a little more oil (about 1 tbs). Add the peas and stir everything together. Cook the rice in the skillet for about 2-4 minutes stirring frequently.
Next add the soy sauce, sesame oil, salt, pepper and garlic powder. Please keep in mind that the soy sauce is salty.
Finally, stir the sauces into the rice mixture and let that cook for a couple more minutes. Then plate the rice, let it cool slightly and enjoy!
