Easy Garlic Butter Rice is made with long grain white rice simmered in seasoned chicken broth with sautéed onion and garlic, then finished with butter and fresh parsley.
Melt the butter in a large saucepan over medium heat. Add the diced onion and sauté for about 3 minutes, until it begins to soften. Stir in the garlic and sauté for another minute.
Slowly pour in the chicken broth. Season with salt, black pepper, parsley and garlic powder. Bring the broth mixture to a boil. Add the dry long-grain white rice and stir once to combine.
Cover the saucepan with a tight-fitting lid. Reduce the heat to low and simmer for 18–20 minutes, until the liquid has been absorbed. Do not stir the rice or repeatedly remove the lid while it is cooking.
Remove the saucepan from the heat and let the rice rest for 10 minutes with the lid still on. Remove the lid, add 2 tablespoons of butter and fluff the rice with a fork until the butter melts. Garnish with parsley, serve & enjoy!
