Instructions
Preheat the oven to 350°
Make the shredded hash browns according to the directions on the package and push them onto the bottom of a greased 9 x 13” baking dish. Lightly season them with salt and pepper.
In a medium sized bowl, add the eggs, cooked sausage, and 1 cup of the shredded cheese. Season it with salt, pepper and garlic powder and whisk to combine.
Pour the mixture over the hash browns and spread it out so that it’s flat and even.
Cover with foil and place it into the center rack of the oven for 40 minutes.
Now, sprinkle the top of the casserole with 1 cup shredded cheddar cheese, bacon bits and dried parsley (optional). Pop it back into the oven (uncovered) or another 10 minutes.
Finally, serve warm and enjoy!
