Equipment

  • large Stock Pot with lid

Ingredients

  • 2-3 Pound Chuck Roast
  • Salt and Pepper to taste
  • 2 Tbs Olive Oil
  • 1 Large Onion, diced
  • 3 Cloves Garlic, minced
  • 3 Tbs Flour
  • 32 Oz Beef Broth
  • 1 Sprig Fresh Rosemary
  • ¼ Tbs Garlic Powder

Instructions

  • Cut the chuck roast into evenly sized cubes and season them generously with salt and pepper. Heat olive oil in a large stockpot or Dutch oven with a lid over medium-high heat. Add the beef in batches and sear it on all sides until nicely browned. Remove the beef and set it aside.
  • Reduce the heat to medium and add the diced onion to the same pot. Sauté until softened, scraping up the browned bits from the bottom of the pot.
  • Add the minced garlic and season the onions with salt and pepper. Stir and cook until fragrant. Sprinkle the flour over the onions and garlic. Stir continuously for about a minute or two to cook out the raw flour taste.
  • Slowly pour in the beef broth, stirring constantly to create a smooth gravy.
  • Return the seared beef and any accumulated juices to the pot. Add the fresh rosemary sprig and stir everything together. Bring the mixture to a boil, then immediately reduce the heat to low.
  • Cover the pot with the lid slightly ajar to allow a little steam to escape. Let the beef simmer gently for about 4 hours, stirring occasionally, until the beef is fork-tender and the gravy has thickened.
  • Remove the rosemary sprig. Taste the gravy and adjust the seasonings with additional salt, pepper, and garlic powder if desired. Serve the tender beef tips and gravy over cooked egg noodles, mashed potatoes, or your favorite side dish. Enjoy!
