Ingredients

  • 1.5 pounds Italian Sausage, hot or sweet
  • 8 Mozzarella String Cheese
  • 2. ½ cups Marinara Sauce
  • 1 small Green Bell Pepper, sliced thin
  • 1 small Orange Bell Pepper, sliced thin
  • 1 large Onion, sliced thin
  • 2 cloves Garlic, minced
  • 6 slices Provolone Cheese
  • 2 tbs Olive Oil
  • Salt and Pepper to taste

Instructions

  • Preheat the oven to 400 degrees
  • Line a 9x 13" inch baking dish with about 2 cups of marinara sauce
  • Saute the sliced peppers and onion in a little olive oil and season with salt and pepper.
  • Once the vegetables are soft, add the minced garlic and continue to cook them for another 1-2 minutes.
  • Add the sauted peppers and onions to the baking dish and spread them out evenly on top of the sauce.
  • Slice the middle of the sausage long ways but not completely through and add either a whole mozzarella cheese stick or half (depending on how big the sausage you're using is) to the center of the sausage.
  • Wrap the sausage closed around the mozzarella stick and place them on top of the bed of sausage and peppers seam side up.
  • Drizzle the top with the rest of the sauce and cover the sausages with provolone cheese.
  • Tightly cover the baking dish with foil and bake at 400° for 45 minutes or until the sausage is cooked all the way through.
  • Serve hot over pasta, rice, in a roll or solo and enjoy.
