Preheat the oven to 400 degrees
Line a 9x 13" inch baking dish with about 2 cups of marinara sauce
Saute the sliced peppers and onion in a little olive oil and season with salt and pepper.
Once the vegetables are soft, add the minced garlic and continue to cook them for another 1-2 minutes.
Add the sauted peppers and onions to the baking dish and spread them out evenly on top of the sauce.
Slice the middle of the sausage long ways but not completely through and add either a whole mozzarella cheese stick or half (depending on how big the sausage you're using is) to the center of the sausage.
Wrap the sausage closed around the mozzarella stick and place them on top of the bed of sausage and peppers seam side up.
Drizzle the top with the rest of the sauce and cover the sausages with provolone cheese.
Tightly cover the baking dish with foil and bake at 400° for 45 minutes or until the sausage is cooked all the way through.
Serve hot over pasta, rice, in a roll or solo and enjoy.
