STUFFED SAUSAGE AND PEPPERS

These easy stuffed sausage and peppers are made by placing mozzarella cheese inside sweet Italian sausage and baking them over sautéed peppers and onions in a flavorful tomato sauce and provolone cheese until hot and bubbly.

These stuffed sausage and peppers are such a delicious and easy to make meal that the whole family is sure to love. This recipe is such a fun spin on the traditional Italian dinner. Especially, with all of that ooey gooey cheese stuffed inside the sausages.

What a huge hit it was right off the bat! My whole family loved it so much that we wound up making it a part of our monthly dinner menu rotation. This is a delicious, easy to make dinner thats perfect for a busy weeknight. Give it a try and see for yourself what makes this dish so special.

Ingredients

Heres everything you'll need to make this delicious dinner. You can find the full ingredients list along with measurements and instructions on the recipe card below.

  • Italian Sausage- The rich, savory star of the show!
  • Mozzarella Cheese Sticks- Makes this dish extra special with an ooey gooey center.
  • Onion- Adds a slight sweetness when sauteed.
  • Bell Peppers- Adds color, texture and a sweet, slightly smoky flavor.
  • Garlic- Brings a earthy, homemade taste.
  • Marinara Sauce- Adds acidity and keeps the vegetables and sausage moist.
  • Provolone Cheese- The perfect topping that melts into a slightly nutty smooth flavor.
  • Olive Oil- Softens the peppers and onions when being sauted.
  • Salt & Pepper- Enhances the flavors of the other ingredients.

How To Make It

Preheat the oven to 400 degrees

First, add tomato sauce to the bottom of a 9x13" inch baking dish. In a large skillet, heat the olive oil over medium high heat and add the sliced peppers and onion. Season with salt and pepper and saute until soft. Add the minced garlic and continue to cook them for another 1-2 minutes. Add the peppers and onions to the baking dish and spread them out evenly on top of the sauce.

PRO TIP: Use different colors of bell peppers to really make them pop and appealing visually.

Next, slice the middle of the sausage long ways (but not completely through). Add either a whole mozzarella cheese stick or half (depending on how big the sausage you're using is) to the center and wrap the sausage closed around the mozzarella stick. Place them on top of the bed of sausage and peppers seam side up.

Next, drizzle the top with tomato sauce and cover the sausages with provolone cheese. Place the baking dish into the center rack of the oven, covered, for 45 minutes or until the sausage is cooked all the way through. Let it rest for 5 minutes, serve and enjoy!

PRO TIP: Let the sausage sit to thicken and firm up so the cheese does not pour out as soon as the sausage is sliced.

What Kind Of Sausage Should I Use?

Any kind of either sweet or hot Italian sausage would work here. You could also use a combination of both.

What Should I Serve This With?

This dish goes together perfectly with white rice, pasta or a nice hearty bread.

Storage

Let the sausage cool completely and place it into a food safe, air tight container. It will last in the refrigerator for up to three days.

Ingredients
  

  • 1.5 Pounds Italian Sausage Links
  • 8 Sticks Mozzarella String Cheese
  • 2.5 Cups Tomato Sauce
  • 1 Small Green Bell Pepper, sliced thin
  • 1 Small Orange Bell Pepper, sliced thin
  • 1 Large Onion, sliced thin
  • 2 Cloves Garlic, minced
  • 6 Slices Provolone Cheese
  • 2 Tbs Olive Oil
  • Salt and Pepper to taste

Instructions
 

  • Preheat the oven to 400 degrees
  • Line a 9x 13" inch baking dish with about 2 cups of tomato sauce
  • Saute the sliced peppers and onion in a little olive oil and season with salt and pepper.
  • Once the vegetables are soft, add the minced garlic and continue to cook them for another 1-2 minutes. Add the sauted peppers and onions to the baking dish and spread them out evenly on top of the sauce.
  • Slice the middle of the sausage long ways but not completely through and add either a whole mozzarella cheese stick or half (depending on how big the sausage you're using is) to the center of the sausage. Wrap the sausage closed around the mozzarella stick and place them on top of the bed of sausage and peppers seam side up.
  • Drizzle the top with the rest of the sauce and cover the sausages with provolone cheese.
  • Tightly cover the baking dish with foil and place it into the center rack of the oven for 45 minutes or until the sausage is cooked all the way through. Let it sit for 5 minutes before serving and enjoy.
