The ultimate mashed potatoes are made with seasoned potatoes boiled in chicken broth and blended together with garlic and herb infused butter for a super flavorful side dish.
1-232 ozChicken Broth (you may need more just make sure the potatoes are covered in liquid)
1stickButter
5clovesGarlic, crushed
5sprigsThyme, fresh
5sprigsRosemary, fresh
Salt & Pepper to taste
2tbsGarlic Powder
½cHeavy Cream
⅔ cSour Cream
Parsley or Chives for garnish (optional)
Instructions
Clean, peel and chop the potatoes into 2 inch cubes. Add them to a pot. Cover them in the chicken broth and boil them for about 10-15 minutes or until the potatoes are fork tender.
Drain the potatoes in a colander and set them in the side. In the same pot the potatoes were boiled in, melt the butter and add the fresh garlic, thyme and rosemary. Stir everything together for about ¾ minutes then remove the everything from the butter.
Add the potatoes back into the pot. Season with garlic powder, salt and pepper. Also add the cream and sour cream.
Mash the potatoes until everything is evenly combined and the potatoes are smooth or at your desired consistency.
Serve with a little pad on butter on top and garnish with parsley or chives (optional). Enjoy!
