Lemon and dill roasted potatoes are such a unique side dish that packed with fresh flavors of lemon, dill and garlic. All the different flavors going on in this recipe are absolutely incredible and go together perfectly. The potatoes get so crispy on the preheated baking sheet. I learned that trick a few years ago and its changed my potato game forever.
The crispy seasoned potatoes with the fresh dill and lemon makes this a truly irresistible side dish. Its always a big hit whenever I make it. This is for sure a recipe that you will make again and again. Its been years for me and I could never get tired of them.

- Lemon Juice- Adds the perfect amount of acidity smoothly throughout the potatoes.

How To Make It

Preheat the oven to 400° and place the baking sheet inside the oven to preheat also.
First, place the potatoes into a large bowl. Drizzle them with olive oil and season them with salt, pepper and garlic powder. Give the potatoes a good toss to make sure they’re evenly coated in the oil and seasoning. Carefully take out the hot preheated baking sheet and add the potatoes to it in a single layer. Place them into the center rack of the oven for about 25 minutes or until they’re crispy on all sides.

PRO TIP: Take a spatula and gently stir the potatoes on the baking sheet half way through the cooking process to make sure they get crispy on all sides.
Then in a small bowl, melt the butter in the microwave and mix in the lemon juice, lemon zest, and fresh chopped dill. Pour it over the roasted potatoes and toss everything together until the potatoes are evenly coated. Serve and enjoy!

Can This Be Made In The Air Fryer?
You absolutely can make these potatoes in the air fryer. Coat them in oil and season them as the recipe instructs. Place them into a 400 degree air fryer for 10-20 min shaking the basket half way. Then just continue to follow the recipe as instructed.
What Should I Serve This With?
Potatoes are a great side dish because they can go with just about anything. Serve them with chicken, steak, fish and a roasted vegetable or side salad.
Storage
Let the potatoes cool completely and place them into a food safe air tight container. They will last in the refrigerator for up to three days.

Lemon and Dill Roasted Potatoes Recipe
Equipment
- baking sheet
Ingredients
- 2 Pounds Potatoes, diced into small pieces
- 3 Tbs Olive Oil
- Salt and Pepper, to taste
- 2 Tbs Garlic Powder
- 3 Tbs Butter
- ½ Large Lemon, juiced
- 1 Large Lemon Zested
- 3 Tbs Dill, Fresh
Instructions
- Preheat the oven to 400 degrees and add the baking sheet into the oven so that preheats, too.
- In the meantime, add the potatoes to a medium sized bowl and add the olive oil. Season them with salt, pepper and garlic powder. Toss to combine.
- Carefully add the potatoes to the hot preheated baking sheet and put them back into the oven to cook for about 25 minutes or until the potatoes are nice and golden brown. Take a spatula and gently stir them around about half way through so they crisp up on all sides.
- Melt the butter in a small bowl and add the lemon juice, zest and fresh dill. Mix everything together to combine. Pour the dill butter right onto the top and toss them into the potatoes until they are all evenly coated.
