This easy tamale pie recipe is one of my absolute favorites.
I have a cookbook called Fast Simple Delicious that has 60 recipes total in it.

Only 10 recipes in the book were ones that I’ve posted to social media before and this was one of them.
I had to choose it because I just love it so much.
The flavors go together wonderfully and it’s super easy to make, too.

This is one of those perfect comfort food recipes that will keep you full for hours.
The cornbread crust soaks up all of that enchilada sauce and beef mixture so well.
And honestly I just love eating anything that I can smother in sour cream.

My family is always so excited when I serve this for dinner. It’s definitely a crowd pleaser for sure.

How can I spice this easy tamale pie up?
If you’d like to spice this recipe up, you can do that easily.
Try using a spicy taco seasoning packet to season the beef instead of a mild one.

You can also swap the cheese out for pepper jack or something with some more kick.
In addition, try topping the tamale pie with some diced jalapeños or green chiles when it’s done baking.

That will be sure to spice it up!
Do I have to use ground beef?
No, you don’t have to use ground beef for this recipe if you’d prefer not to.

Ground turkey or ground chicken would work for this recipe, also.
What can I serve this easy tamale pie with?
This tamale pie is a meal all in itself. You can serve this alone if you’d like with no sides.

If you’d like to serve this with something though, I’d recommend something light like a simple side salad because this is a relatively heavy meal.
3 ingredient chili dip or beef queso would be a nice appetizer to this dinner, also.
Do I have to use a cast iron skillet?
No, you don’t have to use a cast iron skillet for this recipe.
I like using one because it cooks the corn muffin mix evenly and gives it a nice little crust, too.

A baking dish would work just fine though if you either don’t have one or prefer not to use one for whatever reason.
Do I really have to shred the cheese myself?
Yes, absolutely! This is the one thing that I’d really urge you not to take a shortcut on.
Pre-shredded bagged cheese has chemicals in it like cellulose.

This keeps the cheese from clumping but it also prevents it from melting properly.
Shred the cheese off the block. The tamale pie will be much creamier that way.
Easy tamale pie ingredients

- Jiffy corn muffin mix
- Egg
- Sour cream
- Can of creamed corn
- Olive oil
- Salt & pepper
- Bell peppe, chopped
- White/ yellow onion, chopped
- Ground beef
- Taco seasoning packets
- Enchilada sauce
- Shredded Monterey & cheddar cheese
- Toppings of your choice (chopped tomatoes, jalapenos, diced onion, sour cream, guacamole, salsa or whatever else you’d like)
Instructions
First, add the Jiffy corn muffin mix, egg, sour cream and creamed corn in a medium sized bowl and stir to combined.

Then add it to a cast iron skillet, smooth it out and bake it at 400° for about 20 minutes. Let it cool slightly when done.

While that’s baking, sauté the bell pepper and onion in a little bit of olive oil and lightly season with salt and pepper.

Then once the vegetables are soft, add the ground beef and cook that according to the directions on the back of the taco seasoning packets. We’re using two pounds so you’ll need two packets.

Now with a fork, poke holes all over the surface of the corn bread

Now evenly pour the enchilada sauce on top.

Next, add the ground beef mixture evenly on top.

Then top it with the shredded cheeses and bake it, covered for another 20 minutes.

Let it cool slightly, add whatever toppings you’d like and serve. Enjoy!

- 12" cast iron skillet
Ingredients
- 1 8.5 oz box Jiffy corn muffin mix
- 1 large egg
- 1/2 c sour cream
- 1 14.7 oz can creamed corn
- 2 lbs ground beef
- 2 1oz packets mild taco seasoning
- 1 white or yellow onion, chopped
- 1 red bell pepper, chopped
- 2 tbs olive oil
- 3/4 c enchilada sauce
- 1 c cheddar cheese, shredded
- 1 c monterey jack cheese, shredded
- salt and pepper to taste
Instructions

Soooo good & soooo easy! I followed the recipe to the tee & I baked it in a tin pan from the dollar store lol. Clean up was a breeze. I added Rotel ontop the last 5 mins of cook time. & put sour cream on the side of the plate for extra dipping mmm mmm. Def keeping in my dinner routine, the fam loves it.
