They taste absolutely incredible and are super easy to make, too.

Mini loaded baked potatoes variations/ tips
I like this recipe as it is but here are some tips and ways to change it up if you’d like to.
- Potatoes - Any small-sized potato will work here, but I prefer the taste of yellow potatoes over red.
- Air Fry - Make these in the air fryer at 400 degrees for about 20 minutes. Give the basket a shake halfway through to ensure they cook evenly.
- Sour Cream - Add the sour cream to a piping bag or get the squeezable version for a much smoother application.

- Cheese - I used cheddar cheese here, but feel free to use any kind of cheese you'd like. Just be sure to shred it yourself because it will melt much better that way.
- Bacon- Pre cooked bacon bits are the perfect size and super convenient. Make your own bacon if you’d prefer and just chop it into small pieces.

Mini loaded baked potatoes ingredients

- Baby potatoes
- Olive oil
- Salt
- Cheddar cheese, hand shredded
- Sour cream
- Chives
- Bacon bits or cooked and crumbled bacon
Instructions
Preheat the oven to 400°
First, clean and dry the potatoes, then place them onto a baking sheet.

Then, drizzle them with olive oil and sprinkle with salt.

Now, rub the olive oil and salt evenly into the skin of the potatoes.

Next, place them into the oven until they are fork-tender. This should take about 20-30 minutes, depending on the size of the potatoes.

Then, let them cool slightly and cut a V-shape into the center of the top. Carefully remove the cut piece along with some of the filling.

Now, add the shredded cheddar cheese first so it can melt a little into the warm potato.

Finally, add the bacon bits and chives. Enjoy!

- 1-1.5 Pounds Baby potatoes
- 2 Tbs Olive oil
- Salt (to taste)
- ¼-1/2 Cup Cheddar cheese, hand shredded
- ¼ Cup Sour cream
