Cheesy Taco Cups
From the recipe collection of Tara Ippolito
These cheesy taco cups are so adorable and couldn’t be easier to make. Muffin tins just make everything look so cute.

Grab and go recipes like this are my favorite. My kids usually ask for these as an after school snack or lunch but I’ve made them for many occasions.
Everyone loves tacos and these are great because they’re customizable to suit everyones tastes.

Just leave a variety of toppings out so guests can choose their own and it’s a perfect choice to serve for parties.
Aside from making these for family get togethers and celebrations, they also make a wonderful game day snack, too.

I’ve even served these for dinner with some rice and a nice big salad on the side. They're always a huge hit.
I hope you give this recipe a try. If you do, I know that you’ll love it just as much as my family and I do.

Cheesy taco cups variations
I love this recipe as it is but here are some ways to change it up if you’d like to.

- Biscuits- instead of biscuits, crescent rolls or wonton wrappers are a good swap out.
- Beef- ground turkey or chicken would work instead of ground beef if you’d prefer.

- Spice- add some heat to this dish by using a hot and spicy taco seasoning packet, choosing pepper jack cheese and topping with diced jalapeño’s.
- Toppings- use any kind of toppings you’d like here. Salsa, guacamole, sliced olives, jalapeños or whatever your preferences are.

Instructions
Preheat the oven to 375°
First, open the can of biscuits and separate them.

Now take each biscuit and using your fingers, carefully separate each one into two horizontally.

Then spray the holes of a muffin tin with cooking spray and place one half of the biscuit into each one.

Next, using your fingers, push the biscuits down into the holes and up against the sides.

Now, in a medium sized skillet, cook the ground beef and season it according to the directions on the back of the taco seasoning packet.

Then, turn the heat to low and stir in the shredded cheese until it’s melted into the taco seasoned ground beef.

Next, spoon the filling into each of the uncooked biscuit cups.

Now, place the muffin tin into the oven until the biscuits are golden brown and cooked all the way through.

Then, let them cool slightly and carefully remove the taco cups using a butter knife to help pull them out if needed.

Finally, top each one with shredded lettuce, diced tomatoes and sour cream. Serve warm and enjoy!
