Crockpot white chicken chili is a fall and winter dinner staple at my house.

As soon as the weather starts to shift here in New Jersey, and the temperature drops, soup and chili season has officially begun.
There’s nothing better than a nice big bowl of comfort food to warm up with on a cool night and this really hits the spot.

Crockpot recipes like this one are lifesavers on busy weekdays when everyone’s schedules are packed with activities. Sometimes I just don't have the time to babysit the stove so this is perfect.
What’s also great is that this recipe makes a lot of chili. We usually wind up eating it the next day for lunch, too.

Personally, I think it tastes even better the next day because flavors really settle into each other.
It couldn’t be easier to make and truly something the whole family will love. It's wonderful to find recipes that we can all agree on. Especially with my picky kids who aren't generally huge chili fans to begin with.

Just add in all the ingredients and in 8 hours you’ve got yourself a delicious, crowd pleasing dinner.

Crockpot White Chicken Chili Variations
I like this recipe made just the way it is but here are some ways to change it up if you’d like to.

- Chicken, any kind of boneless, skinless chicken would work here. It can even go in frozen if needed.
- Seasoning- Taco packets can be used instead of the seasoning in the ingredients list. I recommend adding two.
- Beans- white beans stick to the color theme but black beans or any kind or kidney beans are great swap outs.
- Cheese- any kind of cheese would be ok to use here. Keep in mind if you'd like to keep the "white" theme going, be sure to choose a white cheese. Just be sure to shred it yourself because it will melt way better that way.
- Toppings- topping options are endless here. Try some sliced avocado, diced tomatoes, shredded lettuce or whatever you’d like.

- Chicken Breast
- Onion, diced
- Garlic, minced
- Chicken Broth
- Cream Of Chicken Soup
- White Beans, drained and rinsed
- Diced Green Chilies
- Whole Kennel Corn
- Cream Cheese, soft
- Heavy Cream
- White Cheddar Cheese
- Salt, Pepper, Garlic Powder, Cumin, Chili Powder, Cayenne
Instructions
First, add the chicken, onion, garlic, chicken broth, cream of chicken soup, chicken broth, beans, green chilies into the crock pot.

Now, season it with salt, pepper, garlic powder, chili powder, cayenne pepper and cumin and stir everything together.

Then, place the top on and set it on low for 8 hours.

When seven and a half hours are left, remove the chicken breast, shred it and add it back to the crockpot.

Then, cube the cream cheese and add it to the crockpot along with the heavy cream and shredded cheese.

Now, stir it in and let it continue to cook for the last 30 minutes.

Finally, stir everything together until it’s evenly combined and serve warm. Enjoy!

Ingredients
- 1 pound Chicken Breast
- 1 small Onion (white or yellow), diced
- 4 cloves Garlic, minced
- 2 cups Chicken Broth
- 2 10.5 oz cans Cream of Chicken Soup
- 15 oz can White Beans, drained and rinsed
- 4 oz can Diced Green Chilis
- 15 oz can Whole Kennel Corn
- 8 ounces Cream Cheese, softened
- ½ cup Heavy Cream
- 1 cup White Cheddar Cheese, hand shredded
- Salt and Pepper to taste
- 1 teaspoon Cayenne Pepper
- 1 teaspoon Chili Powder
- 1 teaspoon Cumin
- 1 teaspoon Garlic Powder
Instructions
- Add the chicken, onion, fresh garlic, chicken broth, cream of chicken soups, chicken broth, beans, green chilies into the crock pot.
- Season it with salt, pepper, garlic powder, chili powder, cayenne pepper and cumin and stir everything together.
- Then, place the top on and set it on low for 8 hours.
- When seven and a half hours are left, remove the chicken breast, shred it and add it back to the crockpot along with the cubed cream cheese, heavy cream and shredded cheese.
- Now, stir it in and let it continue to cook for the last 30 minutes.
- Finally, stir everything together until it’s evenly combined and serve warm. Taste and re season if needed. Enjoy!
