This frozen mixed vegetable casserole is such an easy and delicious side dish.

We love making this for holidays like Thanksgiving and Christmas because it’s always a huge hit.
The creamy, cheesy vegetables with the buttery breadcrumb topping make this it a guaranteed crowd pleaser.
Using a bag of frozen vegetables is so convenient, too. This recipe comes together in no time.

Aside from holidays, we like to make this as a side for busy weekday dinners, too.
This recipe can be served with just about anything and for any occasion so the possibilities are endless.

It’s one of my family’s favorite side dishes. Even my picky kids enjoy this one.

Frozen Mixed Vegetable Casserole Variations
I like this recipe made just the way it is but here are some ways to change it up if you’d like to.

- Vegetables- any frozen vegetables can be used for this recipe. feel free to mix and match your favorite.
- Cheese- Add an extra layer of the cheese of your choosing between the vegetables and breadcrumb topping.
- Topping- crushed Ritz crackers are a delicious topping option instead of breadcrumbs.

Frozen Mixed Vegetable Casserole Ingredients

- Frozen Mixed Vegetables (thawed)
- Mayonnaise
- Parmesan Cheese
- Butter, melted
- Italian Seasoned Panko Breadcrumbs
- Salt, Pepper and Garlic Powder
Instructions
Preheat the oven to 350°
First, in a large bowl, add the vegetables, mayonnaise, Parmesan cheese and season it with salt, pepper and garlic powder.

Now, mix everything together until it’s evenly combined.

Then, add the vegetable mixture to a 9 x 13” baking dish that’s been sprayed with cooking spray and spread it out until it’s smooth and even.

Next, in a small bowl, mix together the breadcrumbs and butter.

Now, sprinkle the mixture over the vegetables.

Then, place it into the oven for about 30 minutes or until the sides are bubbly and the breadcrumbs are toasted.

Finally, let it cool slightly and enjoy.

- 32 oz Frozen Mixed Vegetables, thawed
- 1 cup Mayonnaise
- ½ cup Parmesan Cheese

Just wondering how this veg casserole would work using canned mixed veg(VegAll)? Thinking I may serve as a side for Christmas eve dinner.

Okay this was great tasting and so easy! I used a 29 oz can of veg all instead of frozen because that's what I had on hand. Also wasn't sure about how much parmesean but hey more is never too much for cheese lovers. Thanks for the recipe. It's going on the holiday rotation.
