This creamy chicken gnocchi soup is such a delicious and easy to make dinner that’s perfect for a busy weekday.

It couldn’t be easier to put together and most of the ingredients are pantry staples that I already have on hand.
Not only is this soup incredibly delicious, but it’s also ready to eat in under 30 minutes.
My family loves when I make this for them on a cold fall or winter night. It’s so filling and keeps them full and warm for hours.

This recipe came to me through a friend years ago, and I’ve been making it every cold weather season since.
I do believe this is actually an Olive Garden copycat recipe, but I would not know since I have never had the soup there.
So you can be the judge of if it taste the same or not. All I know is that it is so amazing and we all love it at my house.

And the best part is that it’s made all in one pot so clean up is a breeze.

Creamy Chicken Gnocchi Soup Variations
I like this gnocchi soup recipe made just the way it is but here are some ways to change it up if you’d like to.

- Pasta- swap the Gnocchi out for some cheese tortellini or any small pasta if you’d like.
- Meat- you can use ground beef or sausage if you’d like to instead of shredded chicken. Just be sure to cook the meat before adding it into the soup.
- Broth- Chicken or vegetable broth would both work.
- Spicy- if you’d like to add a little heat, add some red pepper flakes to the vegetables as you sauté them.

- Gnocchi
- Grated Carrot
- Chopped Celery
- Chopped Onion
- Minced Garlic
- Butter
- Olive Oil
- Flour
- Chicken Broth
- Milk
- Heavy Cream
- Parmesan Cheese
- Baby Spinach
- Salt, Pepper, Garlic Powder & Italian Seasoning
Instructions
First, in a large pot, heat the olive oil and butter over medium high heat and add the carrots, celery, onion and garlic.

Now, season the vegetables with salt, pepper, 1 teaspoon of garlic powder and 1 teaspoon of Italian seasoning and sauté them for about 5 minutes stirring frequently.

Then, add the flour and stir it into the vegetables for about two minutes.

Now, stir in the chicken broth.

Next, stir in the milk.

Then, stir in the heavy cream and Parmesan cheese.

Now, season the soup with salt, pepper, garlic powder and the rest of the Italian seasoning. Stir everything together until it’s evenly combined.

Next, stir in the shredded chicken.

Then, stir in the baby spinach until it begins to wilt into the soup.

Then, raise the heat to a gentle boil and the gnocchi.

Now, let the gnocchi cook in the soup for about 3-5 minutes and reduce the heat to low to keep warm.

Finally, place a few ladles of the soup into individual bowls, serve warm and enjoy.

Ingredients
- 16 oz Gnocchi
- 2 large Carrots, grated
- 2 Stalks Celery, chopped
- 1 medium Onion, diced
- 4 cloves Garlic, minced
- ½ stick Butter
- 2 tbs Olive Oil
- ¼ cup Flour
- 3 cups Chicken Broth
- 3 cups Milk
- 1.5 cups Heavy Cream
- 2 cups Cooked Chicken, shredded
- 5 oz Baby Spinach
- ½ cup Parmesan Cheese
- Salt and Pepper to taste
- 1 tbs Garlic Powder
- 2 tbs Italian Seasoning
Instructions
