Newport beef casserole is an old-school comfort food recipe made with seasoned ground beef and sautéed vegetables baked with pasta and lots of melted cheese.

This Newport beef casserole truly is an oldie but goodie theat the whole family will love.

This is a recipe that dates back all the way to the 70's. It was my grandfather‘s and my mother grew up eating it very often.

This was one of her favorites growing up and so she made it for my siblings and I all the time when we were kids, too.

My grandfather loved to cook and followed recipes to Tea. This one is straight from an old school recipe card catalog McCall's Great American Recipe Card Collection (1973) as a matter of fact.

I’m sure many of you or your parents and grandparents had this collection also.

My mother still has this recipe cards and uses it to reference when she makes this dish to this day.

It is so nostalgic and cool to see these old recipe, cards still being used now.

Now that I’m a parent myself, I make this casserole recipe for my own family. Just so happens that they absolutely love it too.

My kids are always very excited when I tell them we’re having Newport beef casserole for dinner.

I’m not sure where this name came from but I can tell you that it is absolutely delicious, super easy to make and has stood the test of time in my house. Letting the sauce simmer does take some time but it's worth every minute if you ask me.

Newport Beef Casserole Variations

I like this casserole made just the way it is but here are some ways to change it up if you’d like to.

  • Pasta- Any kind of small tube like pasta will work in this recipe.
  • Ground Meat- Ground turkey or chicken are OK substitutes for the ground beef if you prefer not to use that.
  • Cheese- any kind of shredded cheese will work for this recipe so choose your favorite. Just be sure to shred the cheese yourself because it will melt much better that way.
  • Alcohol- The original recipe uses sherry instead of red wine if you’d like to use that instead.
  • Vegetables -the original recipe also adds mushroom caps to the sautéed vegetables. If you’d like to add them, they would be wonderful.
  • Breadcrumbs- Another adjustment that I made from the original recipe is the breadcrumbs. Toss one cup of breadcrumbs, in 4 tablespoons of melted butter and sprinkle it on top of the casserole before adding the shredded cheddar cheese to add a really nice texture to this dish. ?

Newport Beef Casserole Ingredients

  • Olive Oil
  • Carrot, chopped
  • Celery, chopped
  • Onion, chopped
  • Celery, chopped
  • Garlic, crushed
  • Ground Beef
  • Tomato Paste
  • Crushed Tomatoes
  • Red Wine
  • Frozen Chopped Spinach, drained and thawed
  • Cheddar Cheese, shredded
  • Mezzi Rigatoni (cooked to al dente)
  • Salt, Pepper, Garlic Powder Oregano, and Basil

Instructions

First, in a large skillet, heat the oil and sauté the chopped carrot, onion, celery and garlic for about 5 minutes or until they soften up. Lightly season them with salt and pepper.

Now, add the ground beef and break it up into small pieces with the back of a wooden spoon or spatula as it browns.

Once the beef is cooked all the way through, add the crushed tomatoes, tomato paste and red wine.

Then, stir everything together until it’s nice and evenly combined and season it with salt, pepper, oregano, basil and garlic powder.

Next, turn the heat down and let the sauce simmer for one and a half hours.

Now, stir in the spinach.

Then, stir in the pasta.

Next, add everything in the skillet into a casserole dish and sprinkle the top with the shredded cheddar cheese.

Now, place it in a preheated 350° oven for 30 minutes or until the cheese is melted and the sides are hot and bubbly.

Finally, serve warm and enjoy!

  • 4 tbs Olive Oil
  • 2 large Carrots, diced
  • 1 large Onion, diced
  • 2 stalks Celery, chopped
  • 4 cloves Garlic, minced
  • 1 ½ pounds Ground Beef
  • 6 oz Tomato Paste
  • 28 oz Diced Tomatoes
  • ½ cup Red Wine
  • 10 oz Frozen Chopped Spinach, thawed and drained wll
  • 1 pound Mezzi Rigatoni (cooked to al dente)
  • 1 ½ cup Cheddar Cheese, shredded
  • Salt and Pepper to taste
  • 1 tbs Dried Oregano
  • 1 tbs Dried Basil

    In the directions it says stir in the spinach and pasta noodles but doesn't say what kind of noodles or how much also doesn't state how much spinach (raw or cooked) to add ?
