You’re going to want to be sure to save this one for the next time you’re in need of a super easy and delicious side dish.

I’m kind of embarrassed to say that I’ve only just started to make these.

I’ve only ever heard of them referred to as funeral potatoes, and to be honest that name just never really appealed to me.

Party potatoes, in my opinion, sounds so much better and way more appropriate, too. I had a little help from my internet friends when looking for a better name. So thank you if you're reading this.

After all, these have become an absolute party food staple in my house.

This recipe is fantastic because it can be a side dish for anything from important holidays like Thanksgiving and Christmas or casual family dinners at home.

We usually serve this with a protein like baked butter chicken, and a vegetable like Roasted Garlic Parmesan Broccoli but choose whatever you prefer.

It’s super versatile and can go with just about any entrée that you’d like.

Shredded hashbrowns covered in cheese and baked to perfection with that crunchy cornflake topping are almost impossible for anyone to resist.

Party Potatoes Variations

I like this recipe for party potatoes made just the way it is but here are some ways to change it up if you’d like to.

  • Potatoes- dice, hash, brown potatoes or shredded hash brown potatoes or both work here. Just make sure that either one is defrosted. ?
  • Soup- Use any “cream of soup” besides cream of chicken that you’d like. It all works in this recipe.
  • Cheese- Any kind of cheese would also work for this recipe. Just be sure to shred the cheese yourself because it will melt much better that way. ?

Party Potatoes Ingredients

  • Frozen Shredded Hashbrowns, dethawed
  • Sour Cream
  • Cream of Chicken Soup
  • Salt, Pepper and Garlic Powder
  • Melted Butter
  • Corn Flakes, crushed

Instructions

Preheat the oven to 350°

First, in a large bowl, add the shredded hashbrowns, shredded cheddar cheese, can of cream of chicken soup and sour cream.

Now, season it with salt, pepper, and garlic powder.

Next, stir everything together until it’s nice and evenly combined.

Then, add the mixture to a baking dish and smooth it out so that it’s flat and even.

Now, in a small bowl, stir together the crushed corn flakes and melted butter.

Next, evenly sprinkle the corn flakes on top of the potatoes.

Then, place it in the oven for 50–60 minutes or until the sides are hot and bubbly and the corn flakes are toasted.

Finally, let it cool slightly and enjoy!

Ingredients
  

  • 1 pound Frozen Shredded Hashbrowns, defrosted
  • 2 cups Cheddar Cheese, hand shredded
  • 10.5 oz can Cream of Chicken Soup
  • 2 cups Sour Cream
  • 2 cups Corn Flakes
  • 4 tbs Butter, melted
  • Salt and Pepper to taste
  • 1 tbs Garlic Powder

Instructions
 

  • Preheat the oven to 350°
  • First, in a large bowl, add the shredded hashbrowns, cheddar cheese, can of cream of chicken soup, and sour cream.
  • Season it with salt, pepper, and garlic powder and mix everything together until its evenly combined.
