One of the easiest and most delicious recipes that you’ll make this summer is going to be these BBQ chicken and pineapple kabobs.

I can’t get over how impressive these look either. The colors of this dish are just beautiful and complement each other so well.
Speaking of things that complement each other, the chicken, barbecue sauce and pineapple are an absolutely delicious combination.

This is a wonderful recipe to make during those hot summer months when it’s too warm to cook inside and grilling season is in full bloom.
All you need to serve this with is a nice big garden salad or maybe some rice and you’re good to go.
I made these kabobs down the shore at my sister and brother in laws house recently. Our last night there we decided to have a big BBQ with everyone.

These were such a huge hit and were one of the first things to go. I got so many compliments on them from everyone who tried it.

BBQ Chicken And Pineapple Kabobs Variations
I like this chicken kabob recipe made just the way it is, but here are some ways to change it up if you’d like to.

- Chicken- Chicken breast would work in this recipe, too, if you’d prefer them.
- Add Ins- Feel free to add in some extra vegetables like sliced bell peppers.
- Cooking Method- These kebobs can be made outside on the grill or indoors on a grill pan.
- Skewers- I prefer metal skewers when cooking kabobs but wooden skewers would be ok to use. Try to soak them in water for a hour or so before using so that they don’t burn.

- Chicken Thighs
- Fresh Pineapple, cubed
- Red Onion, cut into chunks
- Fresh Garlic, minced or grated
- Salt, Pepper and Garlic Powder
- Sweet Baby Rays Barbecue Sauce
- Metal Skewers
Instructions
First, cut up the chicken thighs into 1-2” pieces and add them to a large bowl. Season them with salt, pepper and garlic powder.

Next, grate the fresh garlic into the bowl.

Then, add the barbecue sauce.

Now, mix everything together until the chicken is evenly coated in the seasonings and sauce.

Next, cover the bowl with plastic wrap and place it into the fridge for at least a few hours but ideally over night.

Then, place the cubed chicken, red onion and pineapple onto the metal skewers. You can alter them out to make a nice looking pattern of your choice.

Next, place the skewers onto a hot grill or grill pan.

Now, rotate the kabobs onto all sides until the chicken, vegetables and fruit are slightly charred and the chicken is cooked all the way through.

Finally, either serve on the skewers or remove everything and place it onto a serving platter. It’s a matter of preference just be sure to be careful of the hot metal skewers. Enjoy!
