Lemon blueberry sheet cake is a crowd pleasing dessert made with boxed lemon cake mix and fresh blueberries baked and topped with a sweet lemon glaze.

Lemon Blueberry Sheet Cake

Lemon blueberry sheet cake is the super easy to make sweet treat that you're guaranteed to make again and again.

This one is sure to please any sweet tooth of the summer. The zesty Lemons and sweet blueberries go together so perfectly for a truly irresistible dessert.

I made this one for a Fourth Of July party at my house this year and it was such a huge hit. Both the adults and kids couldn't get enough of it.

My favorite part was how easy it was to put together. Using a boxed cake mix was such a great shortcut to take.

This would be a fantastic dessert to bring to any warm weather BBQ, picnic or party. It's super delicious and looks pretty, too.

Don't feel like you need to wait for a special occasion to make this, though. It would be just as wonderful to have as an after dinner treat. Maybe even better!

Regardless of the occasion, everyone will be asking for seconds of this sweet and tart dessert.

Lemon Blueberry Sheet Cake Variations

I like this sheet cake recipe made just the way it is, but here are some ways to change it up if you'd like to.

  • Berries- feel free to swap out the blueberries for blackberries, raspberries or even strawberries if you'd like.
  • Cake Mix- I used boxed cake mix to make this process a whole lot easier on myself. If you'd like, you can always make vour own cake

Lemon Blueberry Sheet Cake Ingredients

  • Boxed Lemon Cake Mix (plus the ingredients to make it)
  • Blueberries
  • Flour
  • Powdered Sugar
  • Lemon Juice
  • Lemon Zest

Instructions

First, in a large bowl, stir together the lemon cake mix and all of the ingredients to make it.

Now, in a small bowl, toss the blueberries in a little flour. This is supposed to help the blueberries from sinking to the bottom of the cake. Most of mine still sunk, but maybe you'll have better luck.

Next, fold the blueberries into the cake batter.

Then, line a 9 x 13" baking dish with parchment paper, leaving the sides long. That will make it easier to pull the cake out later.

Now, pour the cake batter into the parchment paper lined baking dish and smooth it out so that it's flat and even.

Next, bake it in the oven according to the directions on the back of the cake mix package.

In the meantime, mix together the powdered sugar and lemon juice until it's evenly combined.

Once the cake is fully baked and still warm, pour the lemon glaze on top.

Then, using the back of a spoon, spread it out evenly.

Next, garnish with more blueberries and lemon zest and place it into the refrigerator to let it cool completely.

Now, use the long pieces of parchment paper to pull the cake out of the baking dish.

Finally, cut the cake into squares and enjoy!
