These honey roasted carrots are a delicious and easy to make side dish that your family is sure to love.

I make dinner for my family almost every night. Sometimes, finding a side dish that everybody likes can be challenging.

Im especially always looking for vegetable recipes that my two picky little boys will eat. Which, if I’m being honest, isn’t an easy task.

These carrots hit all of the marks. They were super easy to make and so sweet and delicious, too.

The best part about this recipe is that it can be served with just about anything.

We’ve made this recipe to complement everything from a casual diner at home to important holidays like Easter and Thanksgiving.

The carrots are so tender with just the right amount of seasoning and the honey gives they the perfect amour of sweetness.

Honey Roasted Carrots Variations

I like this recipe for roasted carrots made just the way it is but here are some ways to change it up if you’d like to.

  • Carrots- cleaned and peeled sliced carrots or baby carrots would both be ok to use for this recipe.
  • Honey- it’s ok to swap the honey for maple syrup.

Honey Roasted Carrots Ingredients

  • Carrots, peeled and cut into diagonal 2” pieces
  • Olive Oil
  • Butter
  • Garlic, minced
  • Honey
  • Salt, Pepper, Garlic Powder Thyme and Parsley for garnish (optional)

Instructions

Preheat the oven to 400°

First, in a large skillet, heat the olive oil and butter over medium high heat.

Now, add the carrots and season them with salt, pepper, garlic powder and thyme.

Then, toss the carrots in the oil, butter and seasonings and sauté them in the skillet, stirring frequently for about 5-7 minutes.

Now, add the fresh minced garlic and drizzle the carrots with honey. Sauté for one minute.

Then, transfer the carrots to a baking dish and top with pads of butter.

Next, place the baking dish into the center rack of the oven for about 30 minutes or until the carrots are tender.

Finally, garnish with fresh parsley, serve warm and enjoy!

Ingredients
  

  • 1 Pound Carrots, peeled and cut into diagonal 1-2” pieces
  • 2 Tbs Olive Oil
  • 4 Tbs Butter
  • 3 Cloves Garlic, minced
  • 3 Tbs Honey
  • Salt and Pepper to taste
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Dried Thyme
  • Fresh Parsley, for garnish (optional)

Instructions
 

  • Preheat the oven to 400°
  • In a large skillet, heat the olive oil and 2 tbs of butter over medium high heat.
  • Add the carrots and season them with salt, pepper, garlic powder and thyme.
  • Toss the carrots in the oil, butter and seasonings and sauté them in the skillet, stirring frequently for about 5-7 minutes.
  • Add the fresh minced garlic and drizzle the carrots with honey. Sauté for one minute.
  • Transfer the carrots to a baking dish and top with the remaining 2 tbs of butter cut into pads.
  • Place the baking dish into the center rack of the oven for about 30 minutes or until the carrots are tender.
  • Finally, garnish with fresh parsley, serve warm and enjoy!
