These honey roasted carrots are a delicious and easy to make side dish that your family is sure to love. Sometimes, finding a side dish that everybody likes can be challenging. Im especially always looking for vegetable recipes that my two picky little boys will eat. Which, if I’m being honest, isn’t an easy task.
These carrots hit all of the marks. They were super easy to make and so sweet and delicious, too. The best part about this recipe is that it can be served with just about anything. We’ve made this recipe to complement everything from a casual diner at home to important holidays like Easter and Thanksgiving. They're so tender with just the right amount of seasoning. Th honey gives they the perfect amount of sweetness, too.
Honey Roasted Carrots Variations
I like this recipe for roasted carrots made just the way it is but here are some ways to change it up if you’d like to.

- Carrots- cleaned and peeled sliced carrots or baby carrots would both be ok to use for this recipe.
- Honey- it’s ok to swap the honey for maple syrup.

How To Make It

Preheat the oven to 400°
First, in a large skillet, heat the olive oil and butter over medium high heat. Add the carrots and season them with salt, pepper, garlic powder and thyme. Toss the carrots in the oil, butter and seasonings and sauté them in the skillet, stirring frequently for about 5-7 minutes. Add the fresh minced garlic and drizzle the carrots with honey. Sauté for one minute.

Then, transfer the carrots to a baking dish and top with pads of butter. Place the baking dish into the center rack of the oven for about 30 minutes or until the carrots are tender. Finally, garnish with fresh parsley, serve warm and enjoy!

Can I Use Baby Carrots Instead Of Whole Carrots?
Yes, absolutely. Baby carrots would work just fine. You most likely just need to adjust the roasting time because they tend to cook faster.
Do I Have To Peel The Carrots?
Not always. If the're well scrubbed and fresh, the peel is fine. It adds texture and nutrients, too.
What Can I Serve This With?
This side dish goes great with just about anything like roasted chicken. pork, turkey and salmon.
Storage
Let the carrots cool completely and place them into an air tight container. They will last in the refrigerator for up to three days. I love the ones Rubbermaid makes!!

Honey Roasted Carrots Recipe
Ingredients
- 1 Pound Carrots, peeled and cut into diagonal 1-2” pieces
- 2 Tbs Olive Oil
- 4 Tbs Butter
- 3 Cloves Garlic, minced
- 3 Tbs Honey
- Salt and Pepper to taste
- 1 teaspoon Garlic Powder
- 1 teaspoon Dried Thyme
- Fresh Parsley, for garnish (optional)
Instructions
- Preheat the oven to 400°
- In a large skillet, heat the olive oil and 2 tbs of butter over medium high heat. Add the carrots and season them with salt, pepper, garlic powder and thyme.
- Toss the carrots in the oil, butter and seasonings and sauté them in the skillet, stirring frequently for about 5-7 minutes.
- Add the fresh minced garlic and drizzle the carrots with honey. Sauté for one minute.
- Transfer the carrots to a baking dish and top with the remaining 2 tbs of butter cut into pads. Place the baking dish into the center rack of the oven for about 30 minutes or until the carrots are tender.
- Finally, garnish with fresh parsley, serve warm and enjoy!
