Marry me chicken meatballs are such a fun spin on the super popular Marry Me Chicken that took the internet by storm not too long ago.

I made marry me chicken and marry me pasta so many times that I can’t even count.

The sauce is so unique and flavorful. It’s super easy to make, too!

This recipe is a nice combination of both of those things. The chicken meatballs go together so nicely with that delicious sauce over them.

We like to serve this over pasta but it’s wonderful over some rice, too. You could always just eat them alone, too, if you’d like.

The meatballs are very easy to put together, but if you’d like to save some time and cut a big corner you can use frozen chicken meatballs.

I’m all about getting easy meals on the dinner table as quickly as possible. So, do whatever works best for you.

I knew my family already really enjoyed the flavors of marry me sauce but I’m was so pleasantly surprised over how much they loved this dish.

Marry Me Chicken Meatballs Variations

I like this recipe made just the way it is, but here are some ways to change it up if you’d like to.

  • Meat- You can use ground beef or turkey if you’d prefer. This recipe also works with frozen meatballs, too.
  • Serving- Serve this over pasta or rice.

Marry Me Chicken Meatballs Ingredients

  • Ground Chicken
  • Eggs
  • Grated Parmesan Cheese
  • Milk
  • Italian Seasoned Breadcrumbs
  • Salt, Pepper, Garlic Powder, Onion Powder and Italian Seasoning
  • Butter
  • Olive Oil
  • Minced Garlic
  • Red Onion, diced
  • Canned Diced Tomatoes, drained
  • Sun Dried Tomatoes, chopped & some of the oil from the jar
  • Chicken Broth
  • Tomato Paste
  • Heavy Cream
  • Baby spinach

Instructions

Preheat the oven to 375°

First, in a large bowl, add the ground chicken, eggs, seasoned breadcrumbs, milk and Parmesan cheese.

Now, season it with salt, pepper, garlic powder and onion power and mix everything together until it’s evenly combined.

Then, roll the mixture into 2” balls and place them onto a parchment paper lined baking sheet.

Next, place them into the center rack of the oven for 30 minutes.

While the meatballs are cooking, in a large skillet, melt the butter and olive oil over medium high heat and sauté the chopped red onion until soft.

Then, add the minced garlic and sauté for an additional minute.

Next, add the chopped sun dried tomatoes and the oil from the jar that they came in. Sauté for 2 minutes.

Now, stir in the tomato paste.

Then, stir in the diced tomatoes and season them with salt, pepper, garlic powder and Italian seasoning. Let them simmer for 5 minutes.

Next, stir in the chicken broth.

Now, slowly stir in the heavy cream.

Then, stir in Parmesan cheese and let the sauce simmer for 5 minutes.

Next, add the chopped baby spinach and stir it into the sauce until the spinach has wilted. This should take about 3 minutes.

Once the meatballs are done, add them to the sauce.

Now, carefully spoon the sauce over the meatballs and let them simmer in it for about 5 minutes.

Finally, serve warm over pasta or rice and enjoy!

Ingredients
  

  • 1.5 Pounds Ground Chicken
  • 1 Cup Italian Seasoned Breadcrumbs
  • 2 Eggs
  • ¼ Cup Milk
  • ½ Cup Parmesan Cheese
  • 2 Tbs Butter
  • 2 Tbs Olive Oil
  • ¼ Cup Red Onion, diced
  • 3 Cloves Garlic, minced
  • 3 Tbs Tomato Paste
  • ¼ Cup Sun Dried Tomatoes, chopped & 1 Tbs of the oil from the jar
  • 10 Oz Diced Tomatoes, drained
  • ¼ Cup Chicken Broth
  • 2 Cups Heavy Cream
  • 1 Cup Baby Spinach, chopped
  • Salt and Pepper to taste
  • 2 Tbs Garlic Powder
  • 1 Tbs Italian Seasoning
  • 1 Tbs Onion Powder

Instructions
 

  • Preheat the oven to 375°

  • Add the chopped sun dried tomatoes and the oil from the jar that they came in. Sauté for 2 minutes.
  • Now, stir in the tomato paste and diced tomatoes. Season them with salt, pepper, 1 tbs garlic powder and Italian seasoning. Let them simmer for 5 minutes.
  • Next, stir in the chicken broth, heavy cream and Parmesan cheese. Llet the sauce simmer for 5 minutes.
  • Add the chopped baby spinach and stir it into the sauce until the spinach has wilted. This should take about 3 minutes.
  • Once the meatballs are done, add them to the sauce. Carefully spoon the sauce over the meatballs and let them simmer in it for about 5 minutes.
  • Finally, serve warm over pasta or rice and enjoy!
