Lemon and dill roasted potatoes are such a unique side dish that packed with fresh flavors of lemon, dill and garlic.

All the different flavors going on in this recipe are absolutely incredible and go together perfectly.
My family loves potatoes in any form and we eat them often. It’s one of my families all time favorite side dishes.
Im always looking for new and exciting ways to serve them and this recipe is perfect!

They can be served with just about anything from Crockpot Smothered Chicken Legs to a nice juicy Skirt Steak. We've even served these as a holiday appetizer for Thanksgiving, Easter and Christmas.
The potatoes get so crispy on the preheated baking sheet. I learned that trick a few years ago and its changed my potato game forever.

The crispy seasoned potatoes with the fresh dill and lemon makes this a truly irresistible side dish. Its always a big hit whenever I make it.
This is for sure a recipe that you will make again and again. Its been years for me and I could never get tired of them.

Lemon And Dill Roasted Potatoes Variations
I like this potato recipe made just the way it is, but here are some ways to change it up if you'd like to.

- Potatoes- Use any potato that you'd like Yukon Gold or Russet are great. Baby potatoes cut in quarters are wonderful, too.
- Air Fryer- You absolutely can make these potatoes in the air fryer. Coat them in oil and season them as the recipe instructs and pop them into a 400 degree air fryer for 80-20 min shaking the basket half way. Then just continue to follow the recipe instuctions.

- Potatoes, cleaned and diced into small pieces
- Olive oil
- Salt and pepper to taste
- Garlic powder
- Butter
- Lemon
- Lemon zest
- Fresh dill
Instructions
Preheat the oven to 400° and place the baking sheet inside the oven to preheat also.
First, place the cubed up potatoes into a large bowl.

Then, drizzle them with olive oil and season them with salt, pepper and garlic powder.

Next, give the potatoes a good toss to make sure they’re evenly coated in the oil and seasoning.

Next, carefully take out the hot preheated baking sheet and add the potatoes to it in a single layer.

Then, bake them for about 25 minutes or until they’re crispy on all sides. I like to use a spatula and toss them around about half way through the cooking process.

Then in a small bowl, melt the butter in the microwave.

Now, add the lemon juice, lemon zest, and fresh chopped dill.

Now, mix it all together and pour it over the roasted potatoes. Toss to coat the potatoes.

Finally, transfer them to a serving dish and serve warm. Enjoy!

Ingredients
- 2 Lbs Potatoes, diced into small pieces
- 3 Tbs Olive Oil
- Salt and Pepper, to taste
- 2 Tbs Garlic Powder
- 3 Tbs Butter
- ½ Large Lemon, juiced
- 1 Large Lemon Zested
- 3 Tbs Dill, Fresh
Instructions
- Preheat the oven to 400 degrees and add the baking sheet into the oven so that preheats, too.
- In the meantime, add the potatoes to a medium sized bowl and add the olive oil. Season them with salt, pepper and garlic powder. Toss to combine.
- Carefully add the potatoes to the hot preheated baking sheet and put them back into the oven to cook for about 25 minutes or until the potatoes are nice and golden brown. I like to take a spatula and gently stir them around about half way through so they crisp up on all sides.
- Melt the butter in a small bowl and add the lemon juice, zest and fresh dill. Mix everything together to combine.
- Pour the dill butter right onto the top and toss them into the potatoes until they are all evenly coated.
- Transfer them to serving bowl and serve warm. Enjoy!
