I am such a sucker for creamy pasta comfort food recipes like this easy chicken tetrazzini.

My Mom used to make this for us growing up all the time whenever she had some left over chicken to use up. Usually after a nice big Roasted Chicken dinner .
There was nothing better than coming home from school on a cold day and finding out that chicken tetrazzini was on the menu. My siblings and I would all get so excited.

This is the kind of comfort food that will warm you up and keep you full for hours. I absolutely love how well the spaghetti, shredded chicken, cheeses and creamy sauce together. It really is the best.
Now that Im a parent, I make this for my own family, too. Usually after our Roasted Chicken night just like my mom and just like me, my kids love this recipe now, too.

This recipe is such a great recipe to make on a cold and cozy winter night but its wonderful all year round, too.

Easy Chicken Tetrazzini Variations
I like this recipe for chicken tetrazzini made just the way it is, but here are some ways to change it up if you'd like to.

- Chicken- Shredded rotisserie chicken is preferred but any kind of cooked, diced chicken will work.
- Cream Of Soup- Use two cream of chicken soups in stead of one chicken and one mushroom if you'd prefer. Cream of broccoli would be ok too.
- Cheese- Any combination of two cheeses is ok to use. Just be sure to shred the cheese yourself because it will melt much better that way.

Easy Chicken Tetrazzini Ingredients

- Shredded Rotisserie Chicken
- Cooked Spaghetti ( to al dente)
- Cream Of Mushroom Soup
- Cream Of Chicken Soup
- Shredded Cheddar Cheese
- Shredded Monetary Jack Cheese
- Softened Cream Cheese
- Salt and Pepper to taste
- Garlic Powder
- Chicken Stock
Instructions
Preheat the oven to 350.
Fist, add the spaghetti, chicken, cheeses, chicken broth and soups in a large bowl.

Now season it with salt, pepper and garlic powder and stir everything together until it’s evenly combined.

Next, add it to a 9x13 inch baking dish thats been sprayed with cooking spray and smooth it out so that its flat and even.

Then, add more shredded cheddar and monetary jack cheese to the top.

Now, cover the chicken tetrazzini with foil and place it into the center rack of the oven for 25 minutes or until the cheese is melted and the sides are bubbly.

Finally, let it cool slightly, garnish with parsley (optional) and enjoy!


Easy Chicken Tetrazzini
Ingredients
- 1 Rotisserie Chicken, shredded
- 1 Pound Spaghetti, cooked to al dente
- 10.5 Oz Cream Of Mushroom Soup
- 10.5 Oz Cream Of Chicken Soup
- 8 oz Cream Cheese, softened
- 1.5 Cup Cheddar Cheese, shredded
- 1.5 Cup Monterey Jack Cheese, shredded
- 2 Cups chicken stock
- salt and pepper to taste
- 2 Tbs garlic powder
- 2 Tbs parsley, dried (optional)
Instructions
- Preheat the oven to 350
- First, add all of the ingredients (reserve a half cup each of the cheddar and Monterey jack cheese) in a large bowl. Stir to combine.
- Add it to a 9x13 inch baking dish thats been sprayed with cooking spray and smooth it out so that its flat and even.
- Now top it with the reserved cheeses and cover it with foil. You can spray the foil with cooking spray to prevent the cheese from sticking to the top
- Place it into the center rack of the oven for about 20 minutes or until the cheese is melted and the sides are nice and bubbly.
- Finally, let it cool sightly, garnish with parsley (optional) and enjoy

Question: Is the garlic powder 2 Tablespoons (Tbsp) or 2 teaspoons (tspn)? When I was learning to cook. Tablespoon was capitalized, while teaspoon was lower case. 2 tbsp, if it’s Tbsp, seems like a LOT.

I grew up using the same abbreviation as you. But as there's no "b" in teaspoon, I always assume that is what is called for. Also, you're right. Two tablespoons would be A LOT. Even if it did call for two tablespoons, I wouldn't use that much anyway.

So, your recipe calls for children STOCK, the picture of ingredients show chicken BROTH. Which is it? While I'm not a chef I do know that there's a difference in taste and texture.

I don’t give measurements for salt because everyone tolerates it differently. If you think it’s too much salt just pull back on the seasoning then
