Halloween jack o lanterns quesadillas are the perfect way to celebrate spooky season.

I love Halloween, Its such a magical holiday and my absolute favorite growing up.
The idea they anything could happen on Halloween night and looked forward to the entire month.

I remember all the little things my Mother and teachers at school would do to make spooky season memorable for all the kids.
Now that I’m a parent, I want to make sure my kids experience that same magic.

These jack o lantern quesadillas are the perfect way to do that.
They’re super easy to make and hit all the marks for a great Halloween snack, lunch, appetizer or dinner.

My kids love them and I love making them.

What tortillas should I use?
Whatever size tortilla you choose is up to you.
Smaller tortillas make for a really spooky appetizer, lunch or snack option.

The larger tortillas are great for dinner.
What kind of cheese can I use?
This recipe works best when you use a yellow/ orange cheese like cheddar, American or Colby Jack.

I like to leave options pretty open on my recipes usually.
This time Id like to make a strong suggestion in the best interest of the jack o lantern quesadilla that you use one of those.
Or a blend at least.

The orange/ yellow color will come through the carved exposed cut outs and make it more like a pumpkin.
Just also be sure to shred the cheese yourself.
Do I really have to shred the cheese myself?
Yes, absolutely.
This is the one thing that I’d really urge you not to take a shortcut on.

Pre-shredded bagged cheese has chemicals in it like cellulose.
This keeps the cheese from clumping but it also prevents it from melting properly.

Shred the cheese off the block. The quesadillas will be much creamier.
Additional fillings
This recipe is super basic. Just tortillas and cheese.
Feel free to add whatever you’d like.

For example, bacon, seasoned chicken, steak, shrimp or sautéed vegetables.
Halloween jack o lantern quesadillas ingredients

- Flour tortillas
- Cheddar cheese, shredded
- Olive oil
Instructions
First, slice a jack o lantern face out of half of the total quesadillas that your using.

Get creative and make whatever kind of face you’d like.

Now place the NON sliced tortillas down on a parchment paper lined baking sheet.

Then, top that tortilla with the shredded cheese.

Next add the cut out jack o lantern tortilla.

Next, lightly spray the tortilla with olive oil or cooking spray.

Then, bake until the tortilla is lightly browned.

Finally,let it cool slightly and enjoy.

Halloween Jack o Lantern Quesadillas
Ingredients
- 6 med sized flour quesadillas
- 1.5 c cheddar cheese, shredded
- 1 tbs olive oil/cooking spray
Instructions
- First, lay half of the tortillas down on a parchment paper lined baking sheet.
- Spread the cheese out evenly over on top of the toriallas
- Now, cut jack o lantern faces out of the other half of the tortillas and place them on top of the cheese.
- Then lightly spray the tops with with either olive oil or cooking spray
- Finally bake them at 375 degrees for about 8 minutes or until the tortilla is golden brown, Let them cool slightly and enjoy!
