I love making this on cold fall and winter nights for my family and they absolutely love it.

This tortellini soup is super hearty and can be served as a meal all on its own. Its super easy to make, too.
All you need is maybe a nice slice of Italian garlic bread for dunking, and you are all set with a full meal the whole family will love.

I’ve been making this recipe for years. Its a spin on the tortellini soup that my mother used to make my siblings and I when we were kids. Hers was a bit more simple but also incredibly delicious.

- Olive oil
- Onion, chopped
- Ground Sweet Italian Sausage
- Garlic, chopped
- Vegetable or Chicken Broth
- Crushed Tomatoes
- Fresh spinach
- Heavy cream
- Parmesan cheese
- Cheese tortellini
- Salt, Pepper, Garlic Powder & Italian Seasoning
Instructions
First, in a large stock pot, sauté the onion in a little bit of olive oil and lightly season it with salt and pepper.

Then, add the sausage and break it into small pieces using a wooden spoon. Just before the sausage is browned completely, stir in the chopped garlic.

Now add the vegetable broth and crushed tomatoes. Season with salt, pepper, garlic powder and Italian seasoning and stir it all together.

Next add the spinach in in bunches. Stir it until the spinach is wilted.

After that, add the heavy cream and Parmesan cheese. Stir everything together and let the soup cook over medium heat for about 5 minutes.

Finally, add in the cheese tortellini and once they are plump, and have floated to the surface the soup is done.

Taste, and re-season it if needed. Let it cool slightly and enjoy!

- 2 tbs Olive Oil
- 1 large White or Yellow Onion, chopped
- 4 cloves Garlic, chopped
- 1 lb Ground Sweet Italian Sausage
- 3 cups Vegetable or Chicken Broth
- 28 oz can Crushed Tomatoes
- 2 cups Fresh Spinach, rinsed and cleaned
- ½ cup Heavy Cream
- ½ cup Parmesan Cheese
- Salt and Pepper to taste
- 2 tbs Italian Seasoning
- 1 tbs Garlic Powder
Instructions

What would you suggest to use to thicken the broth up a little bit? More like a chowder consistency?
