Baked stuffed tomatoes just scream summer time to me.

In New Jersey, almost everyone has a garden in their back yard and gifting vegetables is a very common practice.
By the end of the season, I usually have more vegetables than I know what to do with.

These stuffed tomatoes are the perfect solution to ensure my veggies get eaten and don’t go to waste.
They’re so simple yet so delicious. The flavors just go together perfectly.

I love to make this for my friends and family as an appetizer, snack or side dish.
It’s perfect for summer parties, picnics and BBQ’s so I wind up making them for a lot of occasions.

Baked Stuffed Tomatoes Variations
I loved this stuffed tomato recipe as it is but here are some ways to change it up if you’d like to.
- Tomatoes- Campari tomatoes are traditionally used in this recipe because they are the perfect size but any tomato will work.

- Breadcrumbs- Italian seasoned breadcrumbs add so much flavor but feel free to use panko if you’d like.
- Add Ins- cooked ground sausage, beef or pork would be fantastic to mix into the breadcrumbs for a heartier meal. You can also add some shredded cheese if you’d like.
- Air Fry- Instead of baking, pop these tomatoes into the air fryer at 375° for about 15-20 minutes.

- Campari Tomatoes

- Fresh Garlic, minced
- Parmesan Cheese, grated

Instructions
Preheat the oven to 375°
First, cut the tops off clean and dry tomatoes.

Now, using a spoon, carefully remove the seeds from the inside and as much liquid that has accumulated as possible.

Then sprinkle the inside of the tomato with salt and pepper.

Next, in a medium sized blow, add the breadcrumbs, parmesan cheese, fresh garlic, basil, parsley, salt, pepper and garlic powered.

Now, drizzle the top with olive oil and give everything a nice big mix until it’s evenly combined.

Then, spoon the breadcrumb mixture into each of the tomatoes and top them with a little more Parmesan cheese.

Next, pop them into the oven for about 20 minutes or until the tomatoes have softened and the breadcrumbs are toasted.

Finally, let them cool slightly and enjoy!

- 6-8 Campari Tomatoes
- 1 cup Italian Seasoned Breadcrumbs
- ½-3/4 c Parmesan Cheese, grated (save some for topping)
- 2 tbs Fresh Basil, chopped
- 2 tbs Fresh Parsley, chopped
- 3 cloves Fresh Garlic, chopped
- ¼ cup Olive Oil
- Salt and Pepper to taste
- 1 tbs Garlic Powder
Instructions
- Preheat the oven to 375°
