This million dollar chicken casserole is a lifesaving recipe on busy weeknights.

How great that everything can just get tossed into a baking dish and dinner is basically done. Fast, easy and minimal dishes to clean up after.
Can’t go wrong with that. Not to mention this recipe is also made with very few simple ingredients, too.

This casserole is so cheesy, creamy and delicious. My family just loves it.
We usually eat this on cooler nights when during the fall and winter because it really sticks to the ribs.

This casserole keeps my family warm and full for hours on those cold nights.
It can either be served alone or over some rice or even pasta. The choice is yours.

Either way, it’s sure to be a hit no matter what you serve it with.

Million Dollar Chicken Casserole Variations
I like this recipe as it is, but here are some ways to change it up if you’d like to.

- Chicken- Instead of shredded rotisserie chicken, about 2-3 cups of and cooked and cubed chicken will work, too.
- Cheese- Any kind of cheese would work for this recipe so choose your favorite. Just be sure to shred the cheese yourself. It will melt much better that way.
- Soup- Any “cream of” soup like Cream of Chicken for example would be ok here.
- Bacon- Precooked bacon bits are ok to use instead of cooked and crumbled bacon. You can also mix some extra bacon bits into the actual chicken mixture if you'd like a little extra, too.

Million Dollar Chicken Casserole Ingredients

- Rotisserie Chicken, shredded
- Cream Cheese, room temp
- Sour Cream
- Cream Of Cheddar Soup
- Red Bell Pepper, chopped
- Onion, chopped
- Cheddar Cheese, hand shredded
- Bacon, cooked and crumbled
- Salt, Pepper and Garlic Powder, chicken bullion
- Scallions, chopped for garnish (optional)
Instructions
Preheat the oven to 350°
First, over medium high heat, add the oil in a small skillet and sauté the bell pepper and onion in a little salt and pepper for about 5 minutes.

Next, in a large bowl, add the shredded rotisserie chicken, softened cream cheese, sour cream, cream of cheddar soup, and sautéed peppers and onions.

Now, season it with salt, pepper and garlic powder and mix everything together until it’s evenly combined.

Then, add the chicken mixture to an 9 x 13” baking dish and, using the back of a spoon, flatten it out so the top is level and even.

Next, sprinkle the shredded cheese and bacon bits on top.

Now, place it in the oven for about 20-30 minutes or until the cheese is melted and the sides are hot and bubbly.

Finally, let it cool slightly, garnish with scallions and serve warm. Enjoy!

- ½ cup Sour Cream
- 10.5 oz Cream of Cheddar Soup
- 1 Red Bell Pepper, chopped
- 1 Onion, chopped
- 1 tbs Olive oll
- 1 cup Cheddar Cheese, hand shredded
- Salt and Pepper to taste
- 1 tbs Garlic Powder
- 1 teaspoon Chicken Bullion
- 2-3 strips Bacon, cooked and crumbled
- 2 tbs Scallions, chopped for garnish (optional)
Instructions
- Preheat the oven to 350 degrees
- Over medium high heat, add the oil in a small skillet and sauté the bell pepper and onion in a little salt and pepper for about 5 minutes.
- In a large bowl, add the shredded rotisserie chicken, softened cream cheese, sour cream, cream of cheddar soup, and sautéed peppers and onions.
- Season it with chicken bullion, salt, pepper and garlic powder and mix everything together until it’s evenly combined. (You may not need to add salt if you're sensitive to it because some of the ingredients are already salty.)
- Add the chicken mixture to an 9 x 13” baking dish and, using the back of a spoon, flatten it out so the top is level and even.
- Sprinkle the shredded cheese and bacon bits on top and bake it in the oven for about 20-30 minutes or until the cheese is melted and the sides are hot and bubbly.
