This chicken noodle casserole has comfort food written all over it. It’s so creamy, cheesy, and incredibly delicious. To me, this is like a cross between chicken pot pie and chicken noodle soup. That might not make much sense now, but you’ll understand once you try it.

I love making this on the cooler fall and winter nights. That's when I know my family could really use something that's going to warm them up and keep them full for hours. Taking little shortcuts, like using a precooked shredded rotisserie chicken and a bag of frozen vegetables, makes this recipe a breeze to put together. It's the perfect choice for a busy weekday dinner.

Ingredients

Here's everything you'll need to make this delicious casserole. You can find the full ingredients list along with measurements and instructions on the recipe card below.

  • Rotisserie Chicken- Makes this dish filing and gives it "chicken noodle" feel.
  • Cream Of Chicken Soup- Adds body and enhances the rotisserie chicken flavor.
  • Sour Cream- Brings creaminess to the filling.
  • Milk- Cuts the thickness of the creamy filling.
  • Cheddar Cheese- Adds a touch of salt and melts in perfectly to help bing the ingredients
  • Egg Noodles- Makes this a hearty and satisfying meal.
  • Frozen Mixed Vegetables- Adds lots of color, flavor and texture.
  • Salt & Pepper- Enhances all the flavor of the other ingredients.
  • Garlic Powder- Adds an even earthy taste to the filing.
  • Onion Powder- Brings warmth and depth to the filling.
  • Butter- Adds richness to the topping.
  • Bread Crumbs- Brings the butter crunch topping that compliments the filling perfectly.

How To Make It

Heres how to make this incredible dinner. You can find the full ingredients list along with instructions on the recipe card below.

Pre heat the oven to 375°

First, in a large bowl add the cream of chicken sop, milk, sour cream, salt, pepper, onion powder and garlic powder. Stir everything together until it’s evenly combined. Then stir in the cheese, chicken and vegetables.

NOTE: If you're sensitive to salt, use low sodium cream of chicken soup.

PRO TIP: Be sure to shred the cheese yourself and avoid the pre shredded stuff that comes in a bag. It will melt much better that way.

Now, gently sir in the egg noodles and add the mixture to a greased 9 x 13" baking dish. Then, in a medium sized bowl, melt the butter and stir in the breadcrumbs. Sprinkle the breadcrumbs on top of the casserole.

NOTE: Plain or seasoned breadcrumbs would both be ok to use here.

Place it into the center rack of the oven for about 30 minutes or until the breadcrumbs are toasted. Finally, let it cool for 5-10 minutes, serve and enjoy.

PRO TIP: Let the casserole cool to firm up and settle. This way it will hold together and be easier to serve.

Can I Use Fresh Vegetables?

Yes, you can use fresh veggies instead of frozen if you prefer. Just cook them before adding them to the casserole mixture.

Storage

Let the casserole cool completely and place it into a food safe air tight container. It will last in the fridge for up to three days.

I make this all the time. The best topping I've ever made is 1 cup of crushed Buttery Tollhouse Crackers, 1/4 cup of grated parmesan cheese (fresh not canned), and 2- 3 tsp. of olive oil. Mix all of this together and spread on top of your casserole before baking. You can even double the topping. Sooo good!
