This beef Lombardi casserole is a classic dinner recipe that the whole family is sure to love.

My mother used to make this for my siblings and I when we were growing up and we absolutely loved it.
This is a true classic recipe that most of you are probably already familiar with.
If you didn’t grow up eating this like me, here is your sign to make it. it’s one of my personal favorites.

The egg noodles are so creamy and the beef and tomato sauce topped with cheesy are so hearty and delicious.
Now that I have my own family, I make this for them once the cold weather hits New Jersey.

It’s the perfect, easy to make dinner that I know will keep them warm and full for hours. It's nice to see that they all enjoy this dish now, too, just like I used to .

Beef Lombardi Casserole Variations
I like this recipe made just the way it is but here are some ways to change it up if you’d like to.

- Pasta- instead of egg noodles any cooked pasta will do.
- Meat- any ground meat like chicken or turkey would work if you’d rather not use ground beef.
- Cheese- use any kind of cheese or cheese blend that you prefer. Just be sure to shred the cheese yourself. It will melt much better that way.
- Diced Tomatoes- Rotel with chilis will add some great flavor to this dish instead of plain canned diced tomatoes.

Beef Lombardi Casserole Ingredients

- Ground Beef
- Onion, diced
- Garlic, minced
- Olive Oil
- Tomato Paste
- Canned Diced Tomatoes
- Egg Noodles (plus a ladle of pasta water)
- Sour Cream
- Cream Cheese (room temperature)
- Corn Starch
- Cheddar Cheese, hand shredded
- Parsley for Garnish (optional)
- Salt, Pepper and Garlic Powder
Instructions
Preheat the oven to 350°
First, in a large skillet sauté the onion and garlic in the olive oil until the onions begin to soften.

Now, add the ground beef and break it up with a wooden spoon or spatula until it’s browned and cooked all the way through. Drain the fat if necessary.

Then, season the meat with salt, pepper and garlic powder and stir in the tomato paste.

Next, stir in the diced tomatoes (with the juice) and let the meat mixture simmer for 5 minutes.

Now, in a medium sized bowl, mix together the sour cream, softened cream cheese, corn starch and ladle of pasta water.

Then, stir in the cooked egg noodles.

Next, add the egg noodle mixture to a 9 x 13 inch baking that’s been sprayed with cooking spray and spread the mixture out until it’s flat and even.

Now, add the beef mixture evenly on top.

Then, sprinkle the top with the shredded cheddar cheese.

Next, place it into the oven for about 30 minutes or until the cheese is melted and the sides are hot and bubbly.

Finally, let it cool slightly, garnish with parsley (if desired) and enjoy!
