This ham and potato casserole is a delicious comfort food recipe perfect for a busy weekday dinner.

It’s easy, delicious and can be thrown together and practically no time.
We usually eat this dish a lot around the holidays when there’s plenty of leftover ham that we need to use up.
I love recycling leftovers, and this is a perfect recipe to do that.

Truth be told, I almost prefer this ham the second time around.
Potatoes, ham and cheese are such a delicious flavor combination together. Every one in my house absolutely loves this recipe.
It’s a hearty meal that keeps my family full and happy for hours. Nothing is better than that on a cold full or winter night.

Cheesy Ham And Potato Casserole Ingredients

- Potatoes, peeled and diced into small pieces
- Cooked Ham, diced into small pieces
- Cheddar Cheese, hand shredded
- Butter
- Four
- Onion, diced
- Milk
- Chicken Broth
- Salt, Pepper and Garlic Powder
- Parsley for garnish, optional
Instructions
Preheat the oven to 400
First, add the diced potatoes to a medium sized bowl and season them with salt, pepper and garlic powder.

Now, toss everything together until the potatoes are evenly seasoned.

Then, add the potatoes to a casserole dish that’s been sprayed with cooking spray and spread them out evenly.

Next, add the diced ham evenly on top.

Now, in a sauce pan, melted the butter and sauté the onion over medium high heat.

Once the onion is soft, add the flour and whisk it in for 2 minutes.

Then, slowly pour in the milk and broth and season it with salt, pepper and garlic powder.

Now, whisk until the sauce starts to thicken up.

Next, stir in some of shredded cheese until it’s smooth and melted into the sauce.

Then, pour the cheese sauce evenly on top of the potatoes and ham.

Now, sprinkle the top with the rest of the shredded cheese.

Next, cover the baking dish with foil and place it into the oven for 45 minutes.

Then, remove the foil and let it cook for an additional 10 minutes.

Now, let it cool for about 10 minutes before serving.

Finally, garnish with parsley, if desired, serve warm and enjoy!

- 1 ½ cups Potatoes, peeled and diced into small pieces be sure to dice them small or the will be undercooked
- 1 cup Cooked Ham, diced into small pieces
- 1 ½ tbs Butter
- ½ small Onion, diced
- ½ c Milk
- ½ c Chicken Broth
- 1 ½ tbs Flour
- 1 ½ cups Cheddar Cheese, hand shredded
- Salt and Pepper to taste
- 1 tbs Garlic Powder
- Parsley for garnish, optional
Instructions
