Easy enchilada casserole is truly a dinner that the whole family will love.

I have made this so many times and every time that I do, my family absolutely devours this. Including myself.
The seasoned ground beef, cheese, enchilada sauce, beans, and tortillas go together so well. Top it with shredded lettuce, diced tomatoes, and sour cream and you’ve got yourself a truly ear irresistible dinner.

My favorite part about this recipe is how filling it is.
This is one of those dinners that I serve to my family on weeknights when everyone comes home from school and I know they want something hearty and warm to eat.

My two boys are very picky eaters and this is one of their favorite meals.
Recipes like this that everybody enjoys and I get no pushback for making are worth their weight in gold.

Easy Enchilada Casserole Variations
I like this casserole recipe made just the way it is, but here are some ways to change it up if you’d like to.

- Tortillas- Any size tortillas will work here as long as you have enough to cover each layer. You can also use corn or flour, depending on your preference.
- Spicy- Add a little heat to this recipe by using hot enchilada sauce, pepper jack cheese, a spicy taco seasoning mix, or by adding more green chilies.
- Meat- I do prefer ground beef for this recipe, but ground turkey or chicken would also work here.
- Cheese- Any blend of cheeses would be great for this recipe. So choose your favorite just be sure to hand shred it yourself and avoid the pre-shredded stuff that comes in a bag because it will melt way better this way. ?

Easy Enchilada Casserole Ingredients

- Flour Tortillas
- Ground Beef
- Taco Seasoning
- Chopped Onion
- Cheddar Cheese, hand shredded
- Monterey Jack Cheese, hand shredded
- Diced Green Chilies
- Pinto Beans, rinsed and drained
- Enchilada Sauce
- Shredded Lettuce, Diced Tomatoes, Diced Red Onion and Sour Cream (optional toppings)
Instructions
Preheat the oven to 350°
First, in a large skillet over medium high heat, add the ground beef and chopped onion.

Now, cook the ground beef and break it into small pieces as it browns. Drain the fat once it’s cooked all the way through.

Next, add the taco seasoning to the ground beef according to the directions on the back of the package. We’re using two packets here for extra flavor.

Then, add the can of diced green chilies and enchilada sauce.

Now, stir everything together until it’s evenly combined and turn off the heat.

Next, add some enchilada sauce to the bottom of a 9 x 13” baking dish.

Then, add two (or more depending on the size of the tortillas you use) tortillas to the bottom of the dish until the surface is covered completely. Don’t forget, you can rip them in half if you need to, too.

Now, add half of the ground beef mixture and smooth it out so that it’s flat and even.

Next, sprinkle half of the beans evenly on top of the ground beef.

Then, add the shredded cheddar and Monterey jack cheese.

Next, drizzle with more enchilada sauce.

Now, repeat those layers and end with a 3rd layer of tortillas.

Next, add the rest of the shredded cheeses and drizzle with more enchilada sauce.

Then, cover the casserole with tin foil and pop it into the oven for about 30 minutes or until the cheese is melted.

Finally, let it cool slightly, add shredded lettuce, diced tomatoes and diced onion (optional) and enjoy!


Easy Echilada Casserole
Ingredients
- 6 Flour Tortillas, large
- 2 pounds Ground Beef
- 1 Onion, diced
- 2 oz Taco Seasoning (2 packets)
- 1.5 cups Cheddar Cheese, hand shredded
- 1.5 cups Monterey Jack Cheese, hand shredded
- 1-2 tbs Diced Green Chilies
- 15.5 oz Pinto Beans, rinsed and drained
- 19 oz Enchilada Sauce
- Shredded Lettuce, Diced Tomatoes, Diced Red Onion and Sour Cream (optional toppings)
