Stuffed pepper casserole is made with sautéed peppers and onions cooked with seasoned ground beef and rice in a flavorful tomato sauce then covered in mozzarella cheese and baked until hot and bubbly.

Have a delicious dinner on the table in under an hour with a super easy to make stuffed pepper casserole.

Traditional stuffed peppers can be tedious to make especially if you’re having a particularly busy day.

Between work, school and my kids extra curricular activities we just simply don’t always have the time.

This recipe is a great way to get all the flavors of the traditional stuffed pepper dinner but with much less of the hassle.

Instead of slicing into those bell peppers, everything is already chopped into perfect bit sized pieces.

To be totally honest, I think I prefer this way now over the typical way to make them. This and my Stuffed Pepper Soup have become family favorites at my house.

I usually serve this to my family on cold fall and winter nights when I know they all could really use something hearty to warm them up.

Everyone loves it and it’s always a big hit. I think my kids especially love all that melted mozzarella cheese on top.

You don’t have to wait for the cold weather to start rolling in though. This casserole recipe is delicious all year around. ?

Stuffed Pepper Casserole Variations

I like this recipe for stuffed pepper casserole made just the way it is, but here are some ways to change it up if you’d like to.

  • Meat- Ground turkey or chicken would be a great replacement for the ground beef if you’d prefer not to use that.
  • Peppers- I like to use different peppers for this casserole to add some color into it. If you’d like to use all three of the same color pepper, you’re welcome to.
  • Rice- I used white rice here but use any kind of rice that you’d like. Using minute rice also makes this recipe super easy to put together. ?
  • Ad Ins- feel free to add sliced mushrooms, zucchini, or whatever else you would put into your traditional stuffed pepper recipe for even more texture and flavors.

Stuffed Pepper Casserole Ingredients

  • Olive Oil
  • Bell Peppers, sliced thin
  • Yellow Onion, sliced thin
  • Garlic, minced
  • Tomato Paste
  • Canned Diced Tomatoes
  • Beef Broth
  • White Rice, cooked
  • Mozzarella Cheese, hand shredded
  • Salt, Pepper, Italian Seasoning and Garlic Powder
  • Parsley, for garnish (optional)

Instructions

Preheat the oven to 375°

First, in a large skillet, heat the oil and add the sliced peppers and onion.

Now, season the vegetables with salt, pepper and Italian seasoning and sauté them until they are soft. This should take about 3- 5 minutes.

Then, add the ground beef and using a wooden spoon or spatula break the meat into small pieces while it cooks.

Once the beef has browned, drain the fat and season it with a little more salt and pepper.

Next, add the chopped garlic and stir it into the meat and vegetables for another 1-2 minutes.

Now, add the tomato paste and stir it into the beef and vegetables.

Then, stir in the can of diced tomatoes.

Next, stir in the beef broth.

Now, add the cooked white rice.

Then, season everything one last time with salt, pepper, garlic powder and Italian seasoning and stir it all together until it’s evenly combined.

Next, add the mixture to a baking dish and smooth the top out so that it’s flat and even.

Now, sprinkle the top with shredded mozzarella cheese.

Then, place the casserole into the oven for 20-25 minutes or until the cheese is melted and the sides are hot and bubbly.

Finally, garnish with parsley (optional), let it cool slightly and enjoy.

  • 2 tbs Italian Seasoning (divided)
  • Parsley, for garnish (optional)

    I can’t have diced tomatoes bc of tomato seeds. Could I substitute something in its place?
