My goodness, this cowboy queso was such a huge hit with my friends and family.

From the moment I served this, it became an instant favorite and I know exactly why.
The creamy cheese with seasoned ground beef and all the beans and vegetables make this a truly irresistible appetizer that everyone is sure to love.

I’ve served this for so many family get togethers, parties and causal hangouts over the years because everyone just can’t get enough of it.
It’s especially a favorite during football season. My husband and his friends request this one a lot for game day watch parties.

All of the ingredients are simple but go together so well. It’s super easy to put together, too.
This recipe makes a lot of dip so you’ll have more than enough to snack on for the next day. That’s assuming your guests don’t eat it up all in one sitting.

Cowboy Queso Variations
I like this queso recipe made just the way it is, but here are some ways to change it up if you’d like to.

- Meat- Ground Beef, ground sausage or chorizo would all be ok to use for this recipe.
- Cheese- Add a little softened cream cheese or shredded cheddar cheese to add even more creaminess.
- Vegetarian- Omit the meat completely and add extra beans and corn to make this dip vegetarian.
- Rotel- If you can’t find Rotel, any kind of diced tomatoes will be ok to use.

- Ground Beef
- Taco Seasoning Packets
- Canned Corn
- Cubed Velveeta
- Rotel with green chilies
- Black Beans
- Diced Red Onion
- Canned Diced Green Chilis
- Sour Cream and Salsa, for garnish (optional)
Instructions
First, in a large skillet make the ground beef according to the directions on the back of the taco seasoning packet. We are going to use two packets for 1 pound of beef to give it lots of extra flavor.

Next, over low heat, add the cubed Velveeta and mix it in until it’s completely melted into the beef.

Then, add the rotelle, black beans, corn, red onions, and canned chilies.

Now, stir everything together until it’s evenly combined.

Finally, add to a serving dish and garnish with a little sour cream and salsa. Serve with tortilla chips and enjoy!


Cowboy Queso

- 1 Pound Ground Beef
- 2 Oz Taco Seasoning
- ½ Cup Corn
- 6 Oz Velveeta
- ½ Cup Black Beans, rinsed and drained
- ¼ Cup Red Onions, diced
- 10 Oz Rotel with Chilies
- 2 Oz Green Chilies (add the whole can if you like a little more heat)

- In a large skillet make the ground beef according to the directions on the back of the taco seasoning packet. We are going to use two packets for 1 pound of beef to give it lots of extra flavor.
- Over low heat, add the cubed Velveeta and mix it in until it’s completely melted into the beef.
- Add the Rotel, black beans, corn, red onions, and canned chilies. Stir everything together until it’s evenly combined.
