Strawberries and cream poke cake is made using boxed cake mix, strawberry pie filling and whipped cream topped with crushed graham crackers and fresh strawberries for a dessert the whole family will love.

This strawberries and cream poke cake was one of the easiest and most delicious desserts that I’ve ever made.

My sons were home from school for spring break and I was looking for something that would be simple to make with them.

They absolutely love strawberries, cool whip and cake. So once I came across this recipe I knew they were gonna love it.

Boy oh boy was I right! They couldn’t get enough of it.

The best part of the whole recipe was that it was easy enough for them to get into the kitchen and help me make it.

This dessert requires very minimal ingredients and effort to make. Easy to put together desserts like this one are right up my alley.

I’m not a great baker so any recipe that I make has gotta be just like this one. Quick, simple and incredibly delicious.

If you’ve got strawberry friends and family in your life, you’ve gotta make this for them. It will be an instant hit for sure.

It’s the perfect sweet treat to bring to a summer BBQ, make for a casual night at home or serve for any holiday.

Strawberries and Cream Poke Cake Variations

I like this poke cake recipe made just the way it is but here are some ways to change it up if you’d like to.

  • Cake Mix- White or yellow boxed cake mix would both work. For a strawberry overload, use boxed strawberry cake mix.
  • Pie Filling- To switch this recipe up a little, use any flavor of pie filling that you’d like. Cherry and blueberry are especially delicious!
  • Toppings- Crushed graham crackers, fresh strawberries or strawberry syrup would all be great topping choices.

Strawberries And Cream Poke Cake Ingredients

  • Boxed White Cake Mix (plus the ingredients to make it)
  • Strawberry Pie Filling
  • Cool Whip
  • Crushed Graham Crackers
  • Fresh Strawberries, sliced

Instructions

First, make the boxed cake mix according to the directions on the back of the package and let it cool.

Then, using the back of a wooden spoon, poke holes in the cake about 2” apart. Be sure not to go all the way to the bottom or the filling will seep out.

Next, add the strawberry pie filling and spread it out evenly on top of the cake pushing some of the filling into the holes.

Now, add the cool whip and spread it evenly on top of the pie filling.

Then, place the cake into the refrigerator for at least 2 hours.

Finally, right before serving, sprinkle the top with the crushed graham crackers and the sliced fresh strawberries. Serve cool and enjoy!

Ingredients
  

  • 1 Box White Cake Mix
  • 2 Cans (40 oz) Strawberry Pie Filling
  • 12 Oz Cool Whip
  • ½ Cup Graham Crackers, crushed
  • ½ Cup Fresh Strawberries, sliced

Instructions
 

  • Make the boxed cake mix according to the directions on the back of the package and let it cool.
