These baked chicken leg quarters are juicy, delicious and always a big hit at dinner time.

Everyone loves a good roasted chicken dinner, right? Well maybe not everyone, but my family sure does.
When I saw these chicken leg quarters at the meat department of a local market, I knew exactly what I’d be making that night for dinner.

They were practically calling my name. So, I just had to scoop them up.
The seasoning on these is super simple and sometimes that’s all you need when you’re making a good quality cut of meat.

The skin should be crispy and the meat should be juicy and flavorful. It truly is the perfect combination.
This recipe is a fantastic comfort food meal to throw together on any day of the week.

It couldn’t be easier to put together and is a guaranteed crowd pleaser.
I usually serve this with a side of rice or Sour Cream Mashed Potatoes and a roasted vegetable like broccoli or Corn On The Cobb in the summer.

Put that all together and you’ve got a meal that truly the whole family will love.

I like this chicken recipe made just the way it is, but here are some ways to change it up if you’d like to.

- Chicken Leg Quarters
- Olive Oil
- Tomato Paste
- Minced Garlic
- Lemon Juice
- Lemon Slices
- Onion Slices
- Pats of Butter
- Salt, Pepper, Garlic Powder, Paprika, Parsley, Chicken Bullion, Onion Powder.
Instructions
First, in a large bowl, add the chicken quarters and drizzle them with olive oil.

Now, add the salt, pepper, garlic powder, paprika, parsley, chicken bullion and onion powder.

Then, add the minced garlic, lemon juice and tomato paste.

Next, massage the seasonings into the chicken until it’s evenly coated.

Now, cover the bowl, and place it into the refrigerator for 30 minutes- a couple of hours.

When you’re ready to cook the chicken, preheat the oven to 350°.

Then, line a baking dish with the lemon and onion slices.

Now, place the chicken on top and top them with the pats of butter.

Then, pop it into the center rack of the oven, covered for 30 minutes.

Next, increase the oven temperature to 400° and baste the chicken in all the juices from the bottom of the pan.

Now, place it back into the oven, uncovered for another 25-30 minutes or until the skin is crispy and the chicken is cooked all the way through.

Finally, let the chicken rest for ten minutes before serving, add some of the sauce created when the chicken was cooking and enjoy!

- 2-4 Chicken Leg Quarters
- 2 Tbs Olive Oil
- 2 Tbs Tomato Paste
- 2 Tbs Lemon Juice
- 1 Large Lemon, cut into thin roungs
- 3 Cloves Garlic, minced
- ½ Small Onion, sliced
- Salt and Pepper to taste
- 1 Tbs Garlic Powder
- 1 Tbs Onion Powder
- 2 Tbs Parsley
- 1 teaspoon Paprika
- 1 Tbs Chicken Bullion
Instructions
- In a large bowl, add the chicken quarters and drizzle them with olive oil. Add the salt, pepper, garlic powder, paprika, parsley, chicken bullion and onion powder.
- Then, add the minced garlic, lemon juice and tomato paste. Massage the seasonings into the chicken until the legs are evenly coated. Try to lift the skin and get it under the skin, also.
- Cover the bowl, and place it into the refrigerator for 30 minutes- a couple of hours.
