This crispy Caprese chicken is the dinner that you absolutely need to make this summer. The cool burrata cheese with the warm, roasted tomatoes and crispy cutlets is irresistibly delicious.And believe me, I’m not just saying that either. I actually couldn’t stop myself from eating these. They were out of this world good.
I’m always looking for new and delicious ways to jazz up my chicken cutlets. This recipe was perfect! I made this for a casual family dinner at home but this would be the perfect thing to make for a dinner party or holiday.

- Homemade Chicken Cutlets or Store Bought
- Cherry Tomatoes
- Olive Oil
- Garlic
- Burrata Cheese
- Shredded Fresh Basil
- Balsamic Glaze
- Salt and Pepper to taste
How To Make It

Preheat the oven to 425°
First, add the cherry tomatoes to a baking dish, drizzle them with olive and add the garlic. Season the tomatoes with salt and pepper then toss everything together until the tomatoes are evenly coated. Place them into the center rack of the oven for about 20 minutes or until they are blistered.

Next, lay the Chicken Cutlets down onto a serving platter. Add a scoop full of the tomatoes onto each piece of chicken. Carefully slice up the burrata cheese and lay the pieces onto each of the chicken cutlets beside the roasted tomatoes. Sprinkle the shredded basil on top and drizzle with the balsamic glaze, serve and enjoy!

Ingredients
- 6-8 Homemade Chicken Cutlets or Store Bought
- 10 Oz Cherry Tomatoes- rainbow colored or red
- 2 Tbs Olive Oil
- 2-3 Cloves Garlic, chopped
- 8 Oz Burrata Cheese
- ¼ Cup Fresh Basil, shredded
- ¼ Cup Balsamic Glaze
- Salt and Pepper to taste
Instructions
- Preheat the oven to 425°
- Add the cherry tomatoes to a baking dish, drizzle them with olive and add the crushed garlic. I made the mistake of cutting my garlic too small and some burned. So be sure to keep the garlic in larger pieces to avoid that mistake.
- Season the tomatoes with salt and pepper then toss everything together until the tomatoes are evenly coated. Place them into the center rack of the oven for about 20 minutes or until they are blistered.
- Lay the Chicken Cutlets down onto a serving platter and add a scoop full of the tomatoes onto each piece.
- Carefully slice up the burrata cheese and lay the pieces onto each of the chicken cutlets beside the roasted tomatoes.
- Sprinkle on the shredded basil, drizzle the chicken with the balsamic glaze, serve and enjoy.
