Cheesy beef noodle casserole is made with seasoned ground beef in a flavorful tomato sauce tossed in egg noodles and baked with a cheddar cheese topping.

Cheesy beef noodle casserole is such a great comfort food meal.

My family loves when I make this on cool fall and winter nights especially.

There’s just something about a nice big bowl of cheesy, beefy egg noodles that really hits the spot.

Even my two picky little boys love this easy to make recipe.

The ingredients are simple and I usually have most of them on hand in my pantry.

Delicious, no fuss recipes like this one always get a permanent spot on my dinner menu rotation.

Plus, I love how many servings this recipe makes. We almost always have leftovers to enjoy for a day or two after.

It’s the perfect meal to throw together on a busy weeknight for my family.

Cheesy Beef Noodle Casserole Variations

I love this recipe made just the way it is, but here are some ways to change it up if you’d like to.

  • Meat- ground chicken or turkey can be used as a substitution for the beef.
  • Pasta- Penne, bow tie or any pasta that’s not thin and long like spaghetti can be substituted for the egg noodles.
  • Cheese- Make this dish extra cheesy by stirring some into the beef and noodles along with adding some to the top. The choice of cheese is yours. So choose whatever you’d like. Just be sure to shred it yourself and avoid the preshredded stuff that comes in a bag. It will melt way better that way.

Cheesy Beef Noodles Ingredients

  • Egg Noodles
  • Olive Oil
  • Ground Beef
  • Onion, minced
  • Garlic, chopped
  • Tomato Sauce
  • Diced Tomatoes (drained)
  • Cheddar Cheese, hand shredded
  • Salt, Pepper Italian Seasoning and Garlic Powder
  • Cooking Spray
  • Dried Parsley, for garnish (optional)

Instructions

Preheat the oven to 350°

First, in a large skillet, heat the olive oil and sauté the onion and garlic for 2 minutes and add the ground beef.

Now, season the beef with salt, pepper and garlic powder and break it down into small pieces as it cooks. Drain the fat if necessary.

Next, add the diced tomatoes and tomato sauce.

Then, season it with salt, pepper, garlic powder and Italian seasoning and stir everything together until it’s evenly combined and let it simmer for 5 minutes.

Now, add the cooked egg noodles into the skillet and toss them into the sauce.

Next, add the beef and noodle mixture to a 9 x 13” baking dish that has been sprayed with cooking spray.

Then, top with shredded cheese and place it in the oven, uncovered, for about 20 minutes or until the cheese is melted.

Finally, let it cool slightly, garnish with parsley (optional) and serve warm. Enjoy!

Ingredients
  

  • 12 bag Egg Noodles
  • 2 tbs Olive Oil
  • 1.5 pounds Ground Beef
  • 1 small Onion, minced
  • 3 cloves Garlic, chopped
  • 2.5 cups Tomato Sauce
  • 15 oz can Diced Tomatoes, drained
  • 2 cups Cheddar Cheese, hand shredded
  • Salt and Pepper to taste
  • 2 tbs Garlic Powder (divided)
  • 1-2 tbs Italian Seasoning
  • Dried Parsley for garnish (optional)

Instructions

  • Season the beef with salt, pepper and half of the garlic powder and break it down into small pieces as it cooks. Drain the fat if necessary.
  • Next, add the diced tomatoes and tomato sauce and season it with salt, pepper, the rest of the garlic powder and Italian seasoning. Stir everything together until it’s evenly combined and let it simmer for 5 minutes.
  • Add the cooked egg noodles into the skillet and toss them into the sauce. Place the mixture to a 9 x 13” baking dish that has been sprayed with cooking spray.
  • Then, top with shredded cheese and place it in the oven, uncovered, for about 20-30 minutes or until the cheese is melted.
  • Finally, let it cool slightly, garnish with parsley (optional) and serve warm. Enjoy!
