If you’re looking for something quick, easy, and always a hit, these Chicken Taco Pinwheels are just the thing. They’re packed with bold taco flavor, creamy cheeses and tender shredded chicken all rolled into a soft tortilla and sliced into the perfect little bite sized pieces. They look fun and impressive but take almost no effort to make on my part.
These pinwheels are perfect as an appetizer, lunch or even as a super satisfying grab and go snack. They’re great for parties, game days and any kind of casual get together. I also love to pack them for the beach or the pool when I need something simple that I know my family will love. Just roll, slice, and serve. It really doesn’t get much easier than that!

First, in a medium bowl, combine the shredded rotisserie chicken, cream cheese, salsa, shredded Monterey Jack cheese, and taco seasoning. Mix until everything is evenly combined and creamy.
PRO TIP: Room temperature cream cheese mixes much easier and prevents lumps in the filling.

Now, lay the tortillas down flat and spread the chicken mixture evenly across each one, leaving about ½ inch around the edges. Roll each tortilla up tightly into a log. Place the rolled tortillas seam side down and refrigerate for about 30 minutes.
PRO TIP: Placing them into the refrigerator helps them firm up and slice cleanly.
NOTE: Dont over fill the tortillas. Too much can make it difficult to roll and cause them to fall apart when slicing.

Finally, using a serrated knife, slice the tortillas into 1–2.5 inch pieces. Serve immediately and enjoy!
