These Chicken Taco Pinwheels are made with taco seasoned shredded chicken, salsa, and a blend of cheeses spread onto a soft tortilla, rolled up tightly, and sliced into flavorful bite size pieces.

If you’re looking for something quick, easy, and always a hit, these Chicken Taco Pinwheels are just the thing. They’re packed with bold taco flavor, creamy cheeses and tender shredded chicken all rolled into a soft tortilla and sliced into the perfect little bite sized pieces. They look fun and impressive but take almost no effort to make on my part.

These pinwheels are perfect as an appetizer, lunch or even as a super satisfying grab and go snack. They’re great for parties, game days and any kind of casual get together. I also love to pack them for the beach or the pool when I need something simple that I know my family will love. Just roll, slice, and serve. It really doesn’t get much easier than that!

Ingredients

  • Shredded Rotisserie Chicken- The main protein that makes the pinwheels hearty and flavorful.
  • Large Flour Tortillas- They hold the filling together and roll up easily for perfect slices.
  • Salsa- Adds moisture and classic taco flavor.
  • Cream Cheese- Creates a creamy base that binds the filling together.
  • Shredded Monterey Jack Cheese- Adds a mild, melty cheese flavor.
  • Taco Seasoning- Brings the bold, savory taco flavor to the filling.

How To Make It

Here’s how to make this incredible lunch, dinner or snack. You can find the full ingredients list along with instructions on the recipe card below.

First, in a medium bowl, combine the shredded rotisserie chicken, cream cheese, salsa, shredded Monterey Jack cheese, and taco seasoning. Mix until everything is evenly combined and creamy.

PRO TIP: Room temperature cream cheese mixes much easier and prevents lumps in the filling.

Now, lay the tortillas down flat and spread the chicken mixture evenly across each one, leaving about ½ inch around the edges. Roll each tortilla up tightly into a log. Place the rolled tortillas seam side down and refrigerate for about 30 minutes.

PRO TIP: Placing them into the refrigerator helps them firm up and slice cleanly.

NOTE: Dont over fill the tortillas. Too much can make it difficult to roll and cause them to fall apart when slicing.

Finally, using a serrated knife, slice the tortillas into 1–2.5 inch pieces. Serve immediately and enjoy!

PRO TIP: A serrated knife works great for slicing the pinwheels without squishing the tortillas down and distorting the shape.

Can I Make These Ahead Of Time?

Yes! These are perfect for making ahead. Roll the tortillas, wrap them tightly in plastic wrap, and refrigerate. Slice them just before serving for the best presentation.

What Kind Of Salsa Works Best?

Any salsa works depending on your preference. Chunky salsa adds texture, while smoother salsa blends more evenly into the filling.

Can I Use Different Cheese?

Yes, you absolutely can. Cheddar, Colby Jack or a Mexican blend cheese all work well in place of Monterey Jack.

Storage

Place the pinwheels into a food safe air tight container. They will last in the refrigerator for up to three days.
