Garlic Butter Chicken Thighs

From the recipe collection of Tara Ippolito

These garlic butter chicken thighs are one of my families favorite meals.

We like to serve them with any kind of vegetable and big scoop of Sour Cream Mashed Potatoes.

They’re such a delicious, no fuss recipe. Perfect for busy weekday dinners.

The chicken is so juicy and tender and the skin is flavorful and crispy. Sometimes a good piece of chicken just really hits the spot.

The ingredients are simple and this recipe is so easy to put together.

Recipes that my family loves amd take little effort on my part are my absolute favorite.

I hope you give this recipe a try. If you do, I know you’ll love it just as much and my family and I do.

Garlic Butter Chicken Thighs Variations

I like this recipe made just the way it is, but here are some ways to change it up if you’d like to.

  • Chicken- bone in, skin on chicken thighs will give you the best flavor for this recipe but chicken breast, legs and skinless, boneless thighs will work, too. Just adjust cooking times to make sure your chicken reaches an internal temperature of 165°.
  • Baking- If you don’t have an oven safe skillet, transfer the chicken to a baking dish and continue cooking it in that.
  • Spicy- Add some hot pepper flakes to the butter and garlic to give the chicken a little kick.

Garlic Butter Chicken Thighs Ingredients

  • Chicken Thighs- bone in, skin on
  • Butter
  • Garlic, minced
  • Parsley, chopped
  • Olive Oil
  • Salt, Pepper, Garlic Powder, paprika, Chicken Bullion.

Instructions

Preheat the oven to 400°

First, pat the chicken thighs dry using a paper towel and add them to a large bowl and add the olive oil, salt, pepper, garlic powder, paprika and chicken bullion.

Now, mix everything together until the chicken is evenly coated in the seasoning and let that marinate for at least 10 minutes.

Then, heat a cast iron skillet (or an oven safe pan) over medium high heat, and add the chicken thighs skin side down.

Now, sear the chicken thighs on both sides for about 5 minutes or until the skin is brown and crispy.

Next, arrange the chicken skin side up and turn off the heat. Add the butter, garlic and parsley to the center and let the butter melt.

Now, spoon some garlic butter over the chicken thighs and place the skillet into the oven for about 15 minutes.

Next, spoon some more garlic butter over the top of the chicken and place it back into the oven to continue cooking for another 15 minutes.

Finally, let the chicken cool slightly, transfer to a serving dish and garnish with parsley (optional). Serve warm and enjoy!
