Loaded Mashed Potato Meatloaf is such a fun spin on a classic dinner that we all grew up on. Meatloaf and mashed potatoes already go hand in hand, so putting them together in one cozy meal just made so much sense to me. It’s hearty, comforting, and feels like something old yet new at the same time.

My family absolutely loves this one. The creamy mashed potatoes baked right on top of the meatloaf make every bite extra filling. It turns a simple weeknight dinner into something just a little more special.

  • Ground Beef – The flavorful base of the meatloaf that keeps it juicy and satisfying.
  • Italian Seasoned Breadcrumbs – Help binds everything together while adding herb flavor.
  • Milk – Soaks into the breadcrumbs to create moisture, preventing the meatloaf from drying out.
  • Egg – Acts as the binder that holds the meat mixture together while it bakes.
  • Ketchup – Adds a touch of sweetness and classic meatloaf flavor with a little tang.
  • Worcestershire Sauce – Brings deep, savory umami flavor that makes the beef taste richer.
  • Salt – Enhances and balances all of the flavors.
  • Pepper – Adds mild heat and warmth.
  • Garlic Powder – Gives consistent, savory garlic flavor throughout every bite.
  • Prepared Mashed Potatoes – The creamy layer that makes this “loaded” and gives the dish that classic meat and potatoes comfort factor.
  • Sour Cream- Adds creaminess and a smooth texture to the mashed potatoes.
  • Cooked and Crumbled Bacon – Adds smoky, salty crunch that balances the richness of the potatoes.
  • Chives – Bring a mild onion flavor and fresh pop of color to brighten everything up.
  • Shredded Cheddar Cheese – Melts into gooey, savory goodness and gives that classic loaded baked potato flavor on top.

How To Make It

This is how to make this awesome dinner. You can find the full ingredients list along with instructions on the recipe card below.

Preheat the oven to 350°F.

First, in a large bowl, combine the ground beef, seasoned breadcrumbs, milk, egg, ketchup, Worcestershire sauce, salt, pepper, and garlic powder. Mix everything together just until combined. Form the mixture into a loaf shape directly on a parchment paper lined baking sheet. Place it on the center rack of the oven for about 30–35 minutes.

PRO TIPS: Don't over mix the meatloaf or it will become dense.

While the meatloaf is baking, warm the prepared mashed potatoes and stir them together with the crumbled bacon, chives, sour cream and shredded cheddar cheese until combined. Remove the meatloaf from the oven and carefully spread the mashed potato mixture evenly over the top. Sprinkle with a little extra cheddar cheese.

PRO TIP: Be sure to shred the cheddar cheese yourself and avoid the pre shredded stuff that comes in a bag. It will melt much better that way.

Now, place it back into the oven for an another 15–20 minutes, or until the internal temperature of the meatloaf reaches 160°F. Let the meatloaf rest for 10 minutes before slicing. Garnish with extra crumbled bacon and fresh chives. Serve and enjoy!

PRO TIP: Let the meatloaf rest so the juices can settle and stay inside while serving.

Storage

Let the meatloaf cool completely and place it into a food safe air tight container. It will last in the refrigerator for up to three days.

  • 2 Pounds Ground Beef
  • 1 Egg
  • ½ Cup Milk
  • 1 Cup Italian Seasoned Breadcrumbs
  • ¼ Cup Ketchup
  • 1 Tbs Worcestershire Sauce
  • Salt and Pepper to taste
  • 1 teaspoon Garlic Powder
  • 2 Cups Prepared Mashed Potatoes
  • ¼ Cup Sour Cream
  • 1 Cup Cheddar Cheese, hand shredded
  • ½ Cup Bacon, cooked and crumbled (plus more for garnish)
  • ¼ Cup Chives (plus more for garnish)

Instructions
 

  • Preheat the oven to 350°F.
  • In a large bowl, combine the ground beef, seasoned breadcrumbs, milk, egg, ketchup, Worcestershire sauce, salt, pepper, and garlic powder. Mix everything together just until combined.   • While the meatloaf is baking, warm the prepared mashed potatoes and add them to a large bowl with the crumbled bacon, sour cream, chives, and ¾ cup shredded cheddar cheese until combined. Remove the meatloaf from the oven and carefully spread the mashed potato mixture evenly over the top. Sprinkle with the rest of the cheddar cheese.
  • Now, place it back into the oven for an another 15–20 minutes, or until the internal temperature of the meatloaf reaches 160°F. Let the meatloaf rest for 10 minutes before slicing. Garnish with extra crumbled bacon and fresh chives. Serve and enjoy!
