This Ritz cracker chicken casserole is one of the easiest and most delicious casserole recipes in my collection. Its right up there with my Chicken Cordon Bleu Casserole recipe.

This one really is a classic. I remember eating all kinds of different versions of this growing up as a kid and loved them all.
It’s super nostalgic for me whenever I make this. It always brings me right back to eating this at the dinner table with my brothers and sister after a long day at school.

But I do have to say that this one is my favorite. It’s my families, too. They all love when I make it for dinner.
We usually serve this on cool fall and winter nights but I promise that it’s delicious all year round.

The best part about this recipe, besides how delicious it turns out, is that it’s super easy to make, too. Everything comes together so easily and I can have it on the table in no time.

Ritz Cracker Chicken Casserole Variations
I love this recipe for chicken casserole made just the way it is, but here are some ways to change it up if you’d like to.

- Crackers- you can omit the bottom layer of crackers if you’d like and just put them on the top. Make only half of what’s recommended in the directions.
- Chicken- 3 cups of any kind of cooked and cubed or shredded chicken would be great.

- Cheese- use any kind of cheese that you’d like. Just be sure to shred it yourself because it will melt much better that way.

- Ritz Crackers
- Melted Butter
- Rotisserie Chicken, shredded
- Frozen Mixed Vegetables, thawed
- Cream Of Chicken Soup
- Sour Cream
- Cheddar Cheese, hand shredded
- Salt, Pepper and Garlic Powder
Instructions
Preheat the oven to 375°
First, in a large bowl, add the shredded rotisserie chicken, sour cream, cream of chicken soup, thawed mixed vegetables and shredded cheddar cheese.

Now, season it with salt, pepper and garlic powder and mix everything together until it’s evenly combined.

Then, in a separate bowl, mix the crushed Ritz crackers and melted butter together.

Next, add half the crackers to the bottom of a 9 x 13” baking dish.

Now, add the chicken mixture and evenly spread it on top of the crackers.

Then, evenly distribute the rest of the crackers on top of the chicken mixture.

Next, cover the casserole and place it into the center rack of the oven for 15 minutes.

Now, uncover the casserole and let it cook for another 15 minutes.

Finally, let it coolly for 10 minutes. Serve warm and enjoy!

- 4 Sleeves Ritz Crackers
- 1.5 Sticks Butter, melted
- 1 Rotisserie Chicken, shredded
- 10 Oz Frozen Mixed Vegetables, thawed
- 1 Cup Cheddar Cheese, shredded
- ½ Cup Sour Cream
- 22.6 Oz Cream Of Chicken Soup
- Salt and Pepper to taste
- 1 Tbs Garlic Powder
Instructions
